Chef Manager - Kazoku Restaurant

Job Description

Aramark Destinations at the Kahn Hotel at High Point University is currently seeking a Chef Manager for the newest restaurant on campus slated to open Fall of 2023.

Kazoku, meaning ?family? is a unique and entertaining dining experience where chefs skillfully prepare the food in front of you at a 10- seat teppanyaki grill table. Restaurant hours of operation Tuesday ? Saturday, 4:30p.m. to 8:30p.m.

The Chef Manager will partner closely with the Director of Restaurants & Restaurant Manager to oversee the day-to-day running of food service and overall quality of products for the restaurant.

Job Responsibilities

  1. Run all aspects of daily operations including but not limited to; managing associates schedules and station assignments, ordering, and receiving products, preparing prep lists and instruction for the team, quality checking products during all stages of preparation, general oversight of production and service, conducting regular internal health and safety inspections, managing daily food cost and spend. Set and maintain a very high standard of food quality in preparation and execution.
  2. Ensure food is handled in a respectful manner and is processed and stored in accordance with SNHD regulations.
  3. Adhere to and enforce company policies and statutory requirements with regard to health and safety, sanitation, fire procedures, and HACCP.
  4. Ensure safe and proper use of equipment.Ensure kitchen equipment is in good working order and address any equipment issues promptly.
  5. Maintain a high standard of cleanliness and sanitation in and around all culinary work areas.Teach, develop, and support the culinary team as needed.
  6. Work with General Manager and front-of-house staff to ensure a positive guest experience.Maintain food cost, labor cost, supply cost, and other controllable expenses within budget guidelines.
  7. Minimize waste and spoilage by monitoring occupancy forecasts.Conduct daily pre-shift meetings with staff.
  8. Temporary or permanent duties and responsibilities may be added to or modified as deemed necessary.
Qualifications

Three (3) year minimum of prior relevant kitchen management experience Must possess or be qualified to obtain Serv-Safe certifications Previous leadership experience in the culinary field is required. Complete knowledge of health and safety regulations Must have basic knowledge of Microsoft Office software. In-depth skills and knowledge of all kitchen operations Adheres to standard recipes and techniques for food preparation and presentation which help to assure consistently high quality and to minimize food costs; exercises portion control for all items served. Ability to execute guidelines for proper staffing to maximize efficiency and minimize labor cost. Excellent interpersonal skills to deal effectively with guests, management, Team Members and other outside contacts. Able to lead and mentor a team. Must be able to work a flexible schedule including evenings and weekends.
