Steward Shift Supervisor Graveyard Shift

FUNCTION:

Supervise the day-to-day operations of the steward department during assigned shift. Ensures cleanliness and maintenance of all kitchens, food preparation areas, and equipment, in compliance with Health Department regulations and Nugget policies and procedures.

RESPONSIBILITIES:

  1. Responsible for the control and distribution of operating equipment and supplies, maintenance of cleaning and sanitation standards, supervision of lead stewards and kitchen workers, and daily duty assignments.
  1. Maintain work areas (kitchens, cooking preparation, compactor area etc.), equipment (cook stoves, grills, stove hoods, deep fryers, etc.) and utensils in a clean and sanitary manner and in accordance with Nugget Casino Resort and all state and local standards.
  2. Train and develop staff to exceed established sanitation and cleanliness levels.
  3. Determine work procedures, prepare work schedules, and expedite workflow.
  4. Train and develop staff to exceed established sanitation and cleanliness levels.
  5. Perform frequent checks of the assigned kitchen area(s) during the shift(s) and personally assist in kitchen sanitation duties as volume requires.
  6. Monitor and maintain established procedures for all kitchen sanitation personnel.
  1. Use correct cleaning chemicals and proper mixing ratios for designated items according to OSHA regulations and hotel requirements. Monitor usage of chemicals to insure maximum efficiency.

  1. Ensure that available equipment and kitchen facilities are in excellent condition. Maintain par levels on chinaware, glassware, flatware, etc.
  2. Instill cooperation between assigned kitchen sanitation and food service personnel to ensure quick and efficient service from the kitchen sanitation area(s).
  3. Assist kitchens in plate up and delivery of food items.
  4. Maintain clean and sanitary conditions in all kitchen and sanitation areas.
  5. Maintain inventory of equipment, chinaware, glass, and silverware.
  6. Set up equipment, chinaware, glass, and silverware for banquet functions.
  7. Display good morale for team members in all assigned area(s).
  8. Ensure adequate staffing for volume of business; recommend addition or deletion of personnel.
  9. Instruct assigned personnel in safety policies and procedures.
  10. Ensure training of personnel is administered in the assigned area(s) as established in the training manuals. Perform post-training evaluations on all personnel.
  11. Support counterparts in other kitchen sanitation area(s) when temporary personnel changes are required.
  12. Establish and maintain effective channels of communication with all levels of the Nugget team and guests.
  13. Using the Nugget's system of recognition, recognize team members who are going "above and beyond" as appropriate.
  14. Knowledgeable of and consistently follow Nugget policies and procedures as well as appropriate local, state, and federal regulations.
  15. Perform work in a safe manner and always maintain a safe environment for fellow team members and guests alike.
  16. Immediately report unsafe conditions, team member or guest incidents to Security, Management, and the Safety Manager.
  17. Maintain a positive and professional image for the Nugget when performing duties or representing the Nugget and encourages others to do the same.
  18. Regular predictable attendance is required.
  19. Other duties and responsibilities as assigned.


REPORTING RELATIONSHIPS: Executive Steward / Executive Chef

MINIMUM REQUIREMENTS:

EDUCATION LEVEL:

High School diploma or equivalent is required.

LANGUAGE:

Effectively communicate with others both verbally and in written form using the English language.

EXPERIENCE:

Minimum 2 years in a supervisor role, with a minimum of 3 - 5 years as a Lead Steward.

SPECIAL SKILLS:

LICENSE/CERTIFICATION:

PHYSICAL DEMANDS AND WORK ENVIRONMENT:

Ability to walk, stand, or sit for extended periods of time.

Ability to lift, and move product up to 50 lbs.

Fine finger manipulation.

Work environment may include smoke and variable temperature, lighting, and noise levels.

Work may be performed indoors and outdoors during special events.
