How to get HACCP Certification

As per Codex Alimentarius Commission guidelines, there are seven HACCP principles as given below

  • Principle 2 – Determine the critical control points (CCPs).
  • Principle 3 – Establish critical limit(s).
  • Principle 4 – Establish a system to monitor control of the CCP.
  • Principle 5 – Establish the corrective action to be taken when monitoring indicates that a particular CCP is not under control.
  • Principle 6 – Establish procedures for verification to confirm that the HACCP system is working effectively.
  • Principle 7 – Establish documentation concerning all procedures and records appropriate to these principles and their application.

The 12 steps of HACCP

  1. Create a food safety team.
  2. Describe the food in great detail.
  3. Describe the intended consumer and how they are going to consume the food.
  4. Construct a Flow Diagram to Describe the Process.
  5. On-site verification of flow diagram.
  6. Conduct a hazard analysis.
  7. Determine critical control points.
  8. Set critical limits of each CCP.
  9. Establish a monitoring system for each CCP.
  10. Establish corrective action.
  11. Verify, then validate.
  12. Establish good record keeping and documentation.
