Recycled Royal Mascots

The importance of the King’s Coronation is probably lost on most children under the age of 5 but there’s ways to make sure they remember being a part of such an incredible historical moments. Try making their very own King and Queen Mascot.

You will need:

2 cardboard tubes
Coloured craft paper
White yarn/thread
Gold and Silver glitter paper
Blue Ribbon
Small Gems
Googly Eyes
Black Pen
Glue
Scissors

British Raspberry Lemonade Bars

Impress your neighbours and friends with these raspberry lemonade bars. They are a delicious treat because of their sweet and tangy flavour combination. The buttery shortbread crust perfectly complements the fruity filling, making for a refreshing and satisfying dessert.

Shortbread originated in Scotland in the 1700s and the UK has been growing raspberries from as early as the 1600s. These tangy raspberry bars make the perfect British dessert.

Ingredients for Shortbread base:

200g plain flour
170g unsalted butter
85g icing sugar
3 tbsp finely grated lemon zest

Method:

Mix all the ingredients together well, flatten to the base of a baking paper lined square tin and bake at 180 degrees Celsius for 25 minutes until golden brown.

Raspberry Top ingredients:

350g raspberries
28g plain flour
225g caster sugar
Juice of 1 large lemon
3 large eggs

Method: Blend all the ingredients in a food processor. Filter through a sieve to remove any bits. Pour over the shortbread base and bake at 160 degrees Celcius for a further 30 minutes.

Leave to cool and then divide up into square bars. Serve up on your favourite eco rascals silicone plate.

Homemade British Scotch Eggs

Scotch eggs are a popular British snack consisting of a hard-boiled egg wrapped in Sausage Meat, coated in breadcrumbs, and deep-fried. They were first created in London in the 18th century and have since become a beloved part of British cuisine.

You can make your own with these ingredients:

500g breakfast sausage

1/4 tsp salt

1/2 tsp black pepper

3 tbsp finely chopped parsely

1.5 tsp mustard

6 large eggs

1/2 cup flour

1/2 cup bread crumbs

Oil for frying

Method:

  1. Mix the breakfast sausage meat, salt, pepper, parsley and mustard in a bowl and mince the meat until smooth.
  2. Hard boil 5 eggs by placing in boiling water for 7 minutes. Leave to cool and de-shell.
  3. Wrap the sausage meat around a full hard boil egg.
  4. Beat the remaining egg into a bowl to create an egg wash
  5. Dip the sausage meat egg into the egg wash
  6. Dip the egg washed sausage meat egg into the flour and then the bread crumbs
  7. Submerge in boiling oil in a pan and cook until golden brown
