Cheesy spinach puffs

120g spinach (cooked)
80g feta
1 tbsp garlic granules
1 sheet ready-rolled puff pastry
1 egg
Instructions
Preheat the oven to 200C and grease a muffin tray
Finely chop the spinach and mix with feta and garlic until fully combined

Fill each square with about 1tbsp of the cheesy spinach mix
Lightly pinch the sides of the pastry around the filling, then lightly brush any exposed pastry with egg wash

Vegetable stuffed triangles

1 onion (diced)
1 tsp ginger paste
1 tsp garlic paste
1/2 tsp turmeric
1 potato (diced)
1 carrot (diced)
50g peas
1 tbsp ground cumin
1 sheet ready-rolled puff pastry
1 egg
1 tbsp vegetable oil
Instructions
Fry the onions in a little bit of oil, then add the ginger and garlic pastes
Add potatoes and carrots and fry until almost fully cooked, then add peas, cumin and turmeric
Fry over a high heat, stirring regularly, until fully cooked and combined, then remove from the heat and set aside
The previous steps can be prepared in advance. When you're ready to cook, preheat the oven to 200C
Roll out the pastry and cut into large squares
Spoon a tablespoon of the vegetable mixture onto each pastry square, forming a triangle shape on one half of the pastry
Egg wash the surrounding pastry and fold into a triangle, using the end of a fork to seal the edges
Bake at 200C for 12-15 minutes or until golden brown
Mushroom Pouches

1 sheet ready-rolled puff pastry
2 onions (chopped)
2 tbsp olive oil
¼ tsp salt
1 tsp dark brown sugar
226g mushrooms (thinly sliced)
2 garlic cloves (pressed)
1 egg
Instructions
Preheat the oven to 200C
Cook the onions in a little oil over a medium heat until golden, then stir in brown sugar, salt and mushrooms
Cook together until the mushrooms are caramelized, then stir in the garlic
Take the mushroom mixture off of the heat and set aside
Roll out the pastry and cut into 6 large squares, then place the squares into a large, greased muffin tray
Fill each pastry with the mushroom mixture then fold the pastry over the top, pinch together and brush with egg wash
Bake at 200C for 18-20 minutes, or until golden brown
Puff pizzas

8 sliced cherry tomatoes
3 basil leaves (chopped)
100g mozzarella (diced)
50g parmesan
Instructions
Preheat the oven to 200C
Roll out the pastry and cut into 6 large squares
Grease a baking tray and lay the squares flat
Sprinkle a mix of mozzarella and parmesan over each square
Add a few slices of cherry tomatoes and chopped basil leaves to each square
Brush the edges of the pastry with egg wash, then bake at 200C for 18-20 minutes until golden brown
Cheese and marmite puff twists

50g mozzarella
1 sheet ready-rolled puff pastry
2 tsp Marmite
Instructions
Preheat the oven to 200C
Roll out the puff pastry and cut into two large squares
On one square of pastry, spread a thin layer of marmite and sprinkle mozzarella cheese on top
Cover with another square of pastry and slice into six thin strips
Carefully twist each strip into a twirl shape and egg wash the pastry
Bake at 200C for 15 minutes or until golden brown
