Eggs are one of the most versatile items to cook for, which goes way beyond simply boiled, fried or scrambled versions of the same. Kormas typically have a gravy made of onions, lots of tomatoes, green chillies and whole spices like cinnamon, cardamom, cloves, coriander, cumin, etc. Egg Kormas are made with boiled eggs and they taste great with Indian breads like chapatis, naans or paranthas.

2. Baked Feta with Eggs.

This egg dish can be made in just a few minutes and can be safely refrigerated for upto two days and tastes wonderful with polenta (bread from Italian maize flour). Veggies in this recipe may include tomatoes and olives as well.

4. Shakshuka

Coming from the North African region, shakshuka is made of eggs in a sauce of tomatoes, chilli pepper, onions spiced with cumin. Artichoke hearts, potatoes and broad beans are added to the original recipe and is served with spicy sausage and zhug, a  spicy green paste. For change, try shakshuka with salty cheese, olive oil and paprika.

 

5. Creamy Egg Risotto.
