Home Cooking - Thai Chicken Meatballs

YYUUUMMMMMMMM - I am a very lucky lady to have a husband who loves to Cook. It really takes the pressure off that we both cook so we can take turns. And this turn hubby dearest decided to be creative and it was a total win! Homemade Thai Chicken Meatballs are AMAZING. Paired with two types of veggie dishes, I was over the moon Thanks my love (ie please please please make this again!)


He started by hand-mincing chicken breasts and mixing them with various Thai flavours such as lemongrass, red chilli, shallots, garlic, fish sauce, coriander leaf and stalk, kaffir lime leaves, kaffir lime juice and some black pepper. He used corn flour to bind it. All chopped by hand, no blenders were used in the making of this dish - only a big cleaver we bought in Singapore (one I am not allowed to touch ;) )



He then formed them into small balls.


And steamed them.


They need to cook through in the steamer.


He then cooked them in a pan until they browned on all sides for additional flavour and served them with some fresh coriander leaves. YUMMMMMM (I may say that again before the end of this post ;))


So so good and pretty too!



He also made us some lovely veggie sides, I love Asian stir fried greens. One was a mixed veg dish like you often get in Thailand. He used red peppers, onions and coco beans. 


And some additional cabbage we found at the market, an Easter cabbage according to the guy who sold it to us. All cooked with chillies, garlic and oyster sauce for a healthy very tasty side. I can't eat meals without veggies anymore!




We also had a random Asian green, no idea what it was exactly but we fried it with soy sauce. And garlic of course... when do we ever cook anything without garlic?


RESULT! Oh my goodness I was so happy with this... To the point of protecting the meatballs left on the table from G as I wanted them for work the next day LOL ;)


The veggies were gorgeous, as usual, but the Meatballs were on another level. So tasty and fresh and even rather spicy from the red chilli through them. SOOOO good. I added a little soy sauce to them for an additional salt hit (though I use the low sodium Kikkoman for this kind of thing) and they were just wonderful. All those beautiful fresh Asian flavours with a touch of caramelisation on the outside. Soft and tasty.
