Technique

Jumble the lime squeeze, sugar and Mint leaves in a little container, squashing the mint as you go - you can involve the finish of a moving pin for this. Fill a tall glass and add a small bunch of ice.

Pour over the rum, blending with a long-taken care of spoon. Top up with soft drink water, embellish with mint and serve.
