WHAT IS LAVENDER & IS IT GOOD FOR YOU?

You might have read this on the other post already, but lavender, botanically known as Lavandula, is a herb that is part of the mint family and it’s widely known for its colour, scent and properties, both medicinal and culinary. There are at least 47 known species of lavender with 450 different varieties of it and it is said to be native to the Mediterranean, Middle East and India and dates back to 2,500 years ago in the Egyptian mummification process.

Lavender is a popular herb with unique flavour and fragrance profiles. Culinary lavender can be used in anything from teas to cocktails, desserts and savoury recipes too. Other varieties of lavender are used to make essential oils, balms, soaps, tinctures and bath gels or to decorate both inside and outside the home.

Among the many benefits of this herb, we can find that:

CAN I USE REGULAR LAVENDER FOR COOKING?

As we mentioned in that article about the lavender cocktail, there are plenty of different species of lavender and some of them will taste better for cooking than others. All the 100 varieties that come from the Lavandula Angustifolia or more widely known as English lavender are perfect for cooking. Some other varieties of the same Lavandula Angustifolia that are great for cooking are Royal VelvetFolgate, and Melissa (BBfamilyfarm.com).

And even if you believe that all lavender was made equal and that it will make a great option for cooking, you are indeed very wrong. Using lavender that is not from these species will result in you tasting soap and perfume in your dessert or drink, not ideal. Especially for this lavender lemon ice cream!

what ingredients do i need to make this lavender liqueur?

Aside from the obvious ingredient that is the lavender, you will also need some plain vodka, simple syrup and lemon zest. Nothing easier, nothing you don’t have already maybe aside from the lavender. But if you have made some of our lavender recipes, you definitely have some on hand and this lavender liqueur will be in front of you in no time. 

how do i make the lavender liqueur?

First of all, zest half a lemon in a glass jar and add the lavender buds and vodka. Seal the jar with a lid and shake it to get everything to mix well. Place the jar in a cool dark place for 2 nights, shaking it occasionally just by shaking it, without having to open the lid.

Once the two nights have passed, strain the liquid in a bowl using a cheesecloth to add an extra layer, so that any dust from the lavender cannot end up in the final lavender liqueur. Press on the solids to extract as much liquid as possible, then discard the dried stuff. It will look dark, but not purple so you might want to add food colouring. A little goes a long way here, so add your food colouring to reach the desired hue, but also don’t forget this step is optional. 

Lastly, add the simple syrup, cover and gently shake. Pour in the bottle or bottles of your choice, then store in a cool, dark place for up to a year, shaking it gently before each use.

The simple syrup is made using equal parts of sugar and water. Let it cook on medium heat until all the sugar is melted, then let it cool down before using it.
