Tacos

Throughout the world, Mexican food is a common cuisine. Popular dishes include tacos, burritos, chimichangas, flautas, and sopes.

Mexican cuisine is based on Mesoamerican cooking traditions. These traditions are believed to have originated from the Aztecs. Mexican dishes often incorporate native ingredients like corn, squashes, and avocados. However, waves of immigration brought new ingredients from other countries.

Tacos are typically made with corn tortillas. A typical filling for tacos is meat. Common vegetables include corn, zucchini, Swiss chard, and spinach. The filling is usually topped with cilantro, chopped onions, and chili sauce. A spicy salsa may also be used as a topping.

The origins of enchiladas are unclear. They are thought to have originated in the 18th century in Mexico. At the time, corn was a staple crop. The corn tortillas were dipped into a chili sauce. The Aztecs called the corn tortillas tlaxcalli, meaning “acorn tortilla.”

In the early 19th century, the Spanish conquistadors documented a feast consisting of enchiladas. The tortillas were white as snow and served on clean napkins. The meal was documented by Bernardino de Sahagun. His description is considered the earliest description of enchiladas in European literature.
