BEET KVASS: THE RECIPE

Ingredients

  • 4 organic red beets
  • 1 tablespoon Himalayan salt
  • Purified water (previously boiled)
  • Optional flavourings: lemon, orange, ginger or spices
  • Hermetically sealed glass jars (1 or 2 liters)

Preperation

  • Start by washing the beets. You can leave the skin on.
  • Cut the beets into small cubes (not too many) and place them at the bottom of the glass jar.
  • Fill the pot with filtered water and leave at least 3 cm of space at the top of the pot. Add salt and desired flavorings.
  • Cover the top of the pot with a cloth, towel, or cheesecloth. You can still secure the fabric with a rubber band or string.
  • Leave the jar on your kitchen counter for at least 3-5 days, at room temperature. Check it daily and remove any foam that forms on top.
  • You’ll know your beet kvass is ready when it has a deep red color, and you start to see fizzy bubbles along the top of the liquid.
  • Remove the cloth and put it back together with the lid. Close the lid tightly and store the jar in your fridge to continue fermenting.
  • Once the tonic is ready, you can consume between 12 to 15 cl twice a day, to cleanse your system and restore the regularity of your bowel movements.
