Linseed gel: An alternative to egg whites and for hair care – Beauty and hygiene

Flaxseeds are among the superfoods for their many health benefits, but did you know that from flaxseeds you can get a gel that looks deceptively like egg white at which has almost the same properties?

No wonder this flaxseed gel is used both in cooking and for hair care. Plus, the viscous liquid can be wonderfully frozen ahead of time, so it’ll always be on hand when you need it.

Make flaxseed gel yourself

The following ingredients are needed for approximately 350 ml of Flaxseed gel:

  • 60g flax seeds (available at health food stores)
  • 600ml water

How to make flaxseed gel:

  1. Briefly bring the flax seeds to a boil and simmer gently on low for about 20 minutes. Stir occasionally so the flax seeds don’t stick to the bottom of the pan.
  2. Pour the resulting flaxseed gel through a hair sieve as soon as a viscous layer forms around the spoon when the wooden spoon is dipped and sticks. Depending on the type of flaxseed, this may take more or less than 20 minutes.
  3. Filter the flaxseed gel and let it cool
  4. You can now use the gel right away.

Our advice: if the flaxseed gel has become too firm, so that the grains in the sieve can no longer be separated from the mass, return it to the saucepan and add boiling water, stirring constantly, until it is again sufficiently liquid.

Note: Light flaxseeds “gel” a few minutes earlier than darker ones. On the other hand, dark flaxseeds contain more omega-3 fatty acids than lighter ones. It is therefore worth testing for yourself which variety of linen is best for which purpose.

Flax seed gel as an egg substitute

Flax seed gel can be used in many recipes for cakes, soups and the like like egg substitute to provide aeration and binding to a preparation. Approximately 30 grams or 35 milliliters of flaxseed gel replaces the egg whites of one medium-sized egg. The amount for the basic recipe above is approximately 390 grams or 11-12 proteins from a Medium sized egg.

Nutrient-rich flaxseed gel for healthy hair

In addition to magnesium, selenium and copper, flaxseed gel also contains omega-3 fatty acids and therefore many nutrients that help maintain healthy hair. That’s why you can do your hair good with a linseed gel hair mask.

  1. To do this, generously distribute the gel on dry hair, on the scalp and especially on the ends of the hair.
  2. It’s best to wrap a towel around your head to keep the gel from dripping out and leave the mask in place for an hour or two.
  3. Then rinse and wash, dry and style your hair as usual.

Because flaxseed gel also has a slightly sticky consistency, it is also ideal as a natural hair gel and like styling alternative for curls.

Vegan flaxseed egg whites

Flaxseed gel is also suitable as a substitute for egg whites within certain limits – it is completely tasteless. This is an advantage over aquafaba-based egg whiteswhich usually have a faint taste of chickpeas or beans that not everyone likes.


For the production of the egg white substitute, it is advisable to allow enough time because the flaxseed gel used as the basis for the vegan egg whites is best frozen and interspersed with small ice crystals in order to create a foam firm when whipped.

Here’s how:

  1. Place the flaxseed gel from the basic recipe in the freezer for a few hours.
  2. Beat the semi-frozen gel with a hand mixer or in a food processor on the highest setting until foam has formed. If the flaxseed gel is well chilled and a mixing bowl chilled, it takes about five minutes.
  3. Your vegan egg whites are ready and can now be used again.

Advice : the coldness of the gel and the high speed of the mixer used ensure that the egg white substitute solidifies in a reasonable period of time. If the hand mixer has a rather low power, foaming can take up to 15 minutes. If the vegan egg whites do not become as firm as you would like even after stirring for a long time, it helps to mix in half a teaspoon of xanthan gum or a teaspoon of guar gum or of locust bean gum in the mixture to stabilize it.

Storing flaxseed gel

Whether as an egg substitute, as a hair care product or for “bad” egg whites: It pays to prepare flaxseed gel in advance and simply freeze it in portions (per example in screw top jars). It is best to allow the gel to thaw slowly in the refrigerator before using.
