Summer Berry Cream Cake

Combine layers of minimally decorated light and fluffy cake with fresh berries and fresh whipped cream for an irresistible summer berry cream cake. This berries and cream cake recipe is a beautiful red, white, and blue dessert that’s perfect for Memorial Day, 4th of July, Labor Day, cookouts, potlucks, or ANY day!

But, the combination of light and fluffy Cake with fruit and whipped cream is…classic…priceless…incredible!

This recipe is different from my Chantilly cake recipe. It’s basically a berry shortcake, but it takes strawberry shortcake to a whole new level!

How To Make 3-Layer Summer Berry Cream Cake

This simple and elegant cake is a berry-studded dessert that looks (and tastes) way more complicated than it is!

Berries And Cream Cake Ingredients

I used a pre-made Angel Food cake from the store because it’s super fluffy and sponge-like, which is the perfect pairing for light whipped cream and summer berries. Plus, it was pre-made…time-saver!

  • Angel food cake
  • Heavy whipping cream (or make homemade whipped cream)
  • Powdered sugar
  • Vanilla extract
  • Strawberries
  • Raspberries
  • Blueberries
  • Blackberries

Summer Berry Cream Cake Preparation Instructions

This cake is unbelievably easy to make. Ready? 🙂

Step 1

In a large bowl use a mixer to whip the cream until stiff peaks form then mix in powdered sugar and vanilla and set aside.

Step 2

Cut the angel food cake horizontally into 3 layers.

Step 3

Place the bottom cake layer on a platter.

Step 4

Evenly spoon the whipped cream onto the layer.

Step 5

Add berries of each kind on top of the cream.

Step 6

Add the middle layer of cake on top of the berries as you continue to build your Summer Berry Cream cake.

Step 7

Spread on whipped cream and berries.

Step 8

Place the top cake layer on and again spread on whipping cream.

Step 9

Arrange the remaining berries on top. Slice, serve, and enjoy your berries and cream cake!

Here are a few ideas to help make your summer berry cream cake perfect every time – or change it up when you want something different!

  • Go Simple – there’s no need to soak this cake in simple syrup or go overboard with decorating this berries and cream cake. The great appeal of this recipe is its simplicity! Form the layers and let the berries act as decorations.
  • Make Sure Your Cake Layers Are Level – as you cut the layers of cake, take care to make the layers as level as possible. Uneven layers will cause your final cake to look lopsided and unstable. If you have uneven layers, you can take a large serrated knife to even them out.

Yes, you could choose to use frozen berries instead of fresh ones. Keep in mind that the frozen berries will have a mushier texture and could be a little more liquidy.

Fresh berries are best, but frozen berries will work.

Unfortunately, it won’t last very long. The cake will quickly soak up the moisture from the fruit and whipped cream and become soggy.

If you can’t use up the entire dish the day you make it, store it in an airtight container in the fridge for up to 1 day. And even then, you may notice that the cake will be a little soggy.
