There's just something about me and strawberries. I tend to go a little crazy for them – especially in the spring when they're in season! But, really, who am I kidding? I'll scarf strawberries like they're going out of style all year long!

Ok, back to today's strawberry deliciousness…Strawberry French Toast Bake. It's basically an overnight french toast filled with strawberry goodness.

And it's my favorite kind of recipe: the kind that looks like you slaved all day but it was really easy to make! Just like my easy Pumpkin French Toast.

You can make this for any weekend brunch, holidays, or even Mother's Day. Won't mom be surprised when you bring her this in bed?!

Strawberry French Toast Casserole Ingredients

Here's what you'll need to make this tasty brunch recipe.

  • 4 teaspoons butter
  • 1 lb loaf of brioche
  • 8 eggs
  • 2 cups milk
  • 1 cup heavy cream
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 8 oz fresh strawberries, washed, tops off, halved or quartered
  • 2 tablespoons brown sugar
  • Powdered sugar – if desired for serving
  • Syrup – if desired for serving

How To Make Strawberry French Toast Bake

Simply follow these instructions to make this Strawberry French Toast Casserole this weekend.

  1. Butter 13×9 baking dish and preheat the oven to 400 degrees.
  2. Cut or tear the brioche into chunks and place evenly in the baking dish.
  3. In a large bowl whisk together eggs, milk, cream, vanilla, and cinnamon until well combined.
  4. Pour egg mixture over the bread, making sure all is coated.
  5. Cover the dish and cool in the fridge overnight.
  6. Tuck cut berries into the bread.
  7. Sprinkle on brown sugar.
  8. Bake for about 25 minutes or until golden brown and done in the center.
  9. Serve with powdered sugar and/or syrup if desired.
