This recipe has a rich, flavorful undertone and creamy texture with an intense flavor. 

The ingredients include: 

  • 1 glass jar of duck spreadable
  • A quarter teaspoon of dried Thyme 
  • A quarter teaspoon of Kosher salt 
  • A quarter teaspoon of black pepper 
  • 1 tablespoon of light brown sugar 
  • A half cup of white vinegar
  • One Bay leaf
  • A pinch of kosher salt
  • Five black peppercorns 
  • One thinly sliced shallot
  • One-quarter cup of dried cherries
  • One clove of thinly sliced shallot
  • A pinch of dried red pepper flakes 
  • One cup of red wine 
  • One tablespoon of lemon juice
  • 1 tablespoon of granulated sugar 
  • ¾ cupful of water 
  • Five stemmed and quarter inch size of dried figs
  • A Demi-baguette cut in half, about 12 inches long. 

Preparation:

The marinated shallots are prepared first by mixing the bay leaf, garlic, salt, brown sugar, red pepper flakes, black peppercorns, and vinegar. The shallots are added, and the mixture is boiled gently for one minute. 

Take the bowl off the heat and place it in a glass container to cool. In a medium pan, mix the cherries, red wine, lemon juice, figs, sugar, and water to make the Cherry Fig Jam.

Over medium-high heat, boil and stir the sugar until it dissolves. Boil the mix for another 15 to 20 minutes, stirring frequently, or at most, until the liquid has evaporated. 

To make the sandwiches, apply the cherry fig jam on the sides of the baguette. Add the duck spreadable and the shallots on top and enjoy!

2. Duck Confit Legs with Mango 

This product for foie gras alternatives is incredible. You can cook them in the oven, frying pan, or even in the microwave. 

The ingredients include:

  • One mango 
  • Olive oil
  • 1 piece of duck confit (2 legs)

Preparation:

Since the legs are already seasoned, there is no need to add salt. Separate the legs carefully from the extra virgin olive oil, then separate the olive oil from the bottom gelatin with a strainer. (Tip: it can be used later to make a meat stock or gravy)

To prepare the mango, you should first allow it to cool to room temperature. After taking the skin off the mango, apply olive oil to both sides of the mango slices. After that, put the mango on the grill when the skillet is hot and reduce the heat to medium. 

As soon as the sleeve is grilling, put a second nonstick skillet over medium heat. Pour the olive oil from the can into a pan and set it to 180°. Place the legs with the skin facing down and fry for a duration of 5 minutes, until the skin becomes crispy and golden.

Then add the mango to the pan with the Duck Confit Legs and cook them together for 2 minutes. After this time, turn off the heat and serve. 

3. Duck Escalopes with Peppered Strawberries

If you are looking for an alternative with incredible flavor, this recipe is the perfect fit. This duck escalopes have less saturated fats than traditional foie gras.

The ingredients include:

  • 1 product of duck escalopes 120 gr. 
  • 600 g ripe strawberries
  • 60 g sugar
  • 3 g salt
  • 10 g black peppercorns

Preparation: 

To prepare the duck escalopes, you should set the griddle to 200 °C (medium-high heat) and, once hot, cook each side for about 60 seconds. Then season to taste with salt and/or pepper. 

For the peppered strawberries, first clean and remove the stems from all the strawberries. Take 4 strawberries and cut them into four similar pieces, these will serve as the main decoration; the rest of the strawberries cut into small pieces. 

In a previously heated pan, sauté the strawberries over medium heat, adding the sugar and pepper. Cook everything together, and when they are ready, take the pan off the heat.

For the presentation, place the escalopes browned with a little salt, arrange the peppered strawberries on the side, and it is ready to enjoy.
