Ingredients for roasted veggie salad

You need the following ingredients to make roasted veggie salad:

  1. 1 red bell pepper, roughly chopped.
  2. 1 lb butternut squash
  3. 1 lb brussels sprouts, hulled and halved.
  4. 1 tablespoon salt.
  5. 1 tsp dried oregano
  6. 1 tsp black pepper
  7. 3 tablespoon olive oil
  8. 4 oz mixed greens

Now, you need to dressing of avocado.

  1. 1 avocado
  2. 1 small garlic clove
  3. Juice of 1 lime
  4. ¼ cup olive oil
  5. ½ tsp salt
  6. ½ tsp black pepper

You don’t need to worry about the ingredients of roasted veggie salad because it all are already available in your kitchen

Prepare roasted veggie salad

  1. Before starting of salad, you start oven and heat it up to 400 degree fahrenheit.
  2. In a bowl, mixed all ingredients like butternut squash, bell peppers, brussels sprouts, dried oregano, salt, pepper, and olive oil until the veggies are coated.
  3. Pour the vegetables upon a baking sheet in even layer and roast for 40 minutes.
  4. To make the dressing place the avocado, garlic, olive oil, salt and lime in a blender and blend them until it becomes creamy.
  5. To assemble the salad, place a handful of mixed greens on a plate and top them with roasted veggies.
  6. Spoon on the avocado spoon and serve it.
