1.Grilled Veggie mayo wrap

Ingredients:
• Red bell pepper grilled- half cup
• Corn flour – half cup
• Mustard paste 1 tbsp
• Tomato ketchup 2 tbsp
• Button mushrooms grilled- half cup
• Green capsicum grilled- half cup
• Lettuce leaves 4-5
• Parmesan cheese powder 2 and half tbsp
• Crumpled black peppercorns
• Refined flour (maida)-1 cup
• Eggless mayonnaise 4 tbsp
• Turmeric powder ¼ tsp
• Yellow bell pepper grilled- half cup
• Baby Corn grilled –half cup

To make the base or tortillas, mix dough first combining refined flour, corn flour, turmeric powder and salt in a bowl and mix well. Use warm water and knead into a soft dough. Make chapatis by flattening on tabletop rolling them out as thin discs dusting with flour and some oil.
Heat a non-stick Tawa. Cook the tortillas one by one on both sides, and roast till cooked on both sides.
Cover the prepared tortillas with aluminum foil.
Mix all the veggies, bell peppers, mushrooms, baby corns, mayonnaise, tablespoons parmesan cheese powder, crushed peppercorns, salt, mustard paste in a bowl.
Combine remaining mayonnaise, tomato ketchup, salt, crushed peppercorns and 1 teaspoon parmesan cheese powder in a bowl and mix well.
Apply prepared mayonnaise-ketchup mixture on each tortilla. Tear and arrange lettuce leaves on one side and place a portion of the prepared vegetable mixture over the lettuce. Then roll it to make a wrap. Repeating the process, prepare the rest.
Quick fast Delicious wraps are ready to serve immediately.

2. Spicy Aloo Crispies

Ingredients:
• Cumin seeds 2 tsp
• Turmeric powder ¼ tsp
• Garlic chopped 1 tsp
• Corn kernels tinned ½ cup
• Potatoes boiled and peeled 2 medium
• Refined flour (maida) – 3 cups
• Green chilies 2- chopped
• Ghee 1 tbsp + as required
• Red chili powder 1 tsp
• Dried mango powder ½ tsp
• Fresh coriander leaves chopped 2 tbsp
• Lemon juice for sealing and brushing
• Garam masala powder ¾ teaspoon
• Salt to taste

Heat one tbsp ghee in a non-stick pan. Add cumin seeds and let them crackle. Then add garlic and sauté.
Put chopped green chilies into the pan following corn kernels and toss. Add red chili powder, turmeric powder, and garam masala powder and mix well. Sauté for a minute.
Add cube-shaped potato and mix well. Add salt and dried mango powder, mix well and cook for a minute. Add finely chopped coriander leaves, toss till it mixes well. Set it away from fire and let cool.
Preheat oven at 180ºC.
Divide the dough into proper sized portions. Roll each portion thin into a circle shape and apply some ghee in the center. Put a portion of that potato mixture in the center. Applying lemon juice on edges, fold it over and seal giving a twist and pattern just like gujia.
Make as much as available dough and mixture available. Put these crispies on a baking tray and place the tray in the preheated oven. Bake until the crust is golden.
Crispy crunchy spicy aloo crispies are ready to serve hot snacks.

3. Idli Satay

Ingredients:

• Cocktail idlis 6-8 inch cubes,
• Onions – cubed – 2 large
• Garlic finely chopped 3-4 cloves
• Pav bhaji masala 1 teaspoon
• Green capsicum seeded and cubed 1 large
• Tomato- 1 large
• Satay sticks
• Salt to taste
• Lemon juice- 2 tbsp
• Green chilies roughly chopped 2
• Roasted peanuts
• Coconut scraped-1/2 cup
• Fresh coriander leaves roughly chopped 2 tablespoons
• Oil 2 tablespoons
• Green garlic roughly chopped 4-5 stalks

Skewer on to each satay in the pattern you like with idli, green capsicum, idli, tomato, idli, onion, idli and green capsicum and repeat the order.
After placing the satay sticks on a plate sprinkle salt, chopped garlic, pav bhaji masala or any other spicy masala, one tablespoon lemon juice and one tablespoon oil.
Heat a Tawa, pour oil and arrange the satay sticks on it. Change the satay sticks time to time so that every piece gets cooked evenly all around.
For chutney:
Grind green chilies, coconut, salt, green garlic, peanuts, coriander leaves, remaining lemon juice, and a little water.
Serve hot with the chutney tasty and quick snacks.

4. Papad Rolls

Ingredients:
• Papad 8
• Potatoes 200 grams
• Red chili powder-1 teaspoon
• Cumin powder- 1 teaspoon
• Turmeric powder- 1/2 teaspoon
• Chaat masala- 1/2 teaspoon
• Ginger 1/2 teaspoon
• Fresh coriander leaves chopped
• Salt to taste
• Oil to deep fry

Peel and mash boiled potatoes. Add red chili powder, chopped coriander leaves, cumin powder, chaat masala, chopped ginger and salt to the mashed potatoes. Mix well.
Divide it into equal portions and place one portion on one side of a papad. Stick the papad like roll fold inwards by applying water on the edges of the papad. Seal it like the potato mixture does not come out.
Heat oil in a kadhai and fry the papad rolls deep on moderate heat. For about a minute. Serve hot with regular chutney or any sauce or cheese dips.

5. Paneer Pops

Ingredients:

• Paneer Cuboids
• Breadcrumbs
• Ginger paste- 1 tsp
• Garlic paste- 1 tsp
• Fresh coriander leaves chopped 1 tbsp
• White pepper powder 1/4 tsp
• Salt to taste
• Processed cheese cut into 1 inch thick slices 50 grams
• Oil to deep fry
• Egg beat
• Bread crumbs 3/4 cup

Make a marination mix of ginger, garlic paste, white pepper powder, salt, and fresh coriander. Marinate the cuboid shaped paneer pieces into that mixture for around 15 minutes.
Heat oil in the pan. Dip each piece into the beaten eggs batter. Then after coating in breadcrumbs and deep fry, till golden brown.
Serve hot with regular chutneys.
