“Fried” Cauliflower Rice (YUM!)

This is a must try recipe! If your ever in the mood for some Chinese food (a pretty frequent mood of mine) then you need this in your life! Not only is it delicious, but it is also very healthy – It’s only 20 calories per cup AND it’s a vegetable! Soooo, to make this reciple here’s a few things you will need:

Riced Cauliflower (Trader Joes is a good place)

– Red and Green Peppers, and onions cut up

– Egg whites

Terriyaki sauce

First, you are going to want to make scrambled egg whites (to resemble the real egg in typical fried rice), Next you need to add in some cut up red, and green peppers, and some onions and finish off with some Terriyaki sauce. Let this stir fry and have the veggies soft! Then add in the Riced Cauliflower and some more Terriyaki sauce. Let everything fry up a little for about five minutes, or until you can see a little dark crisp forming. You can also add peas and corn instead of, or with the other veggies for a different flavor. Feel free to add in chicken to make it a meal, or just use it as a vegetarian lunch!
