It is really easy to put these Cookie Ice Cream Sandwiches together if you have all ingredients ready: cookies and ice cream. You can choose to make your own cookies (oh, you need to give these salted caramel cookies a try, they go perfectly with vanilla ice cream!!) or use store bought ones.

Who doesn’t like creamy delicious ice cream this time of year? Well, I’ve got a better idea… Cookie Ice Cream Sandwiches! These are the perfect dessert and super easy! You can choose your favorite cookies, pair them with your favorite ice cream to get the best treat!

There is something about cookies and ice cream together: more sweetness, a bit of a different texture and one big tasty bite!

Add plenty of your favorite ice cream and let the kids have fun putting these together. It can and may become a bit messy but there’s no better way to create some amazing memories this summer and have some fun!

Cookie Ice Cream Sandwiches

Place all cookies on a working surface face down. If you baked cookies, allow them to completely cool down before starting to assemble the sandwich. Once they called down, turn them face down too.

Place a scoop of vanilla ice cream onto one cookie. Add another cookie on top of the ice cream and press down lightly.

Transfer to the freezer for at least 2 hours to get firm. 

Cookie Ice Cream Sandwiches Recipe

Serves: Makes 6 ice cream sandwiches

Ingredients:

• 12 Cookies (salted caramel cookies are perfect for this recipe)
• Vanilla Ice Cream (or any other preferred flavor)

Method:

1. Place a cookie face down onto work surface. Add a scoop of ice cream. Top with another cookie and gently press down bit to form the sandwich.
2. Transfer to the freezer.
3. Repeat with remaining ingredients.
