Recipe for Loaded Breakfast Tater Tots

We love breakfast recipes; breakfast for dinner, breakfast for brunch, and breakfast for … breakfast! We’ve shared delicious recipe ideas in the past including our fried chicken and waffles, breakfast quesadillas, and a yummy breakfast casserole. Let’s add one more dish to your hot breakfast ideas list, our recipe for loaded Tater Tots.

These crispy Loaded Tater Tots are topped with egg, sausage, bacon, tomato, spinach, and mushrooms. They are perfect for breakfast, brunch, or breakfast for dinner.

Loaded breakfast tater tots

We served these loaded tater tots one morning when all of our kids and grandkids came over for breakfast. What I love about these is everyone can add their own toppings, so for those who don’t eat pork, they can just add tomatoes, mushrooms, and spinach. Just remember to cook everything separately for those who don’t eat certain foods, or have food allergies.

Topping ideas

Are you wondering what to add to your tater tots? Here are some delicious topping ideas:

  • Eggs – poached, scrambled, or fried
  • Breakfast sausage
  • Bacon
  • Fresh produce – tomatoes, spinach, mushrooms, peppers, avocado, asparagus
  • Garnishes – green onions, parsley, chives, dill, thyme, red pepper flakes
  • Cheese – shredded or a cheese sauce
  • Sour cream – alternatively, a combination of mayonnaise and sour cream, or Mexican Crema (which is my favorite)

Serving tips

Whether you have picky eaters, food allergies, or people who don’t eat certain foods, make sure to serve everything separately. Create a serve-yourself bar with trays and bowls for your toppings including sauces with spoons. You might even need to separate meat from the vegetables so there’s no cross-contamination.

Separating everything is a particularly good idea if you have picky kids who ‘don’t like their food to be touching other food’.

Keep all of your toppings warm in the oven either in casserole dishes or on baking trays covered with aluminum foil if you are not ready to serve immediately.

Once you are ready to serve, have guests load up their tater tots in small casserole dishes (or any dishes that are oven-proof). Put them back into the oven to melt cheese, wilt the fresh spinach, and cook eggs (if they want the egg cracked over the top and not pre-cooked). Note: fresh eggs cracked over the top will take approximately 10 minutes to bake at 400F.

Loaded Breakfast Tater Tots

These loaded Breakfast Tater Tots are perfect for brunch or breakfast for dinner. Base your ingredient quantities on how many people you are going to serve. We used 2 bags of tater tots to serve 10-12 people.

Ingredients

  • Tater tots
  • Grape tomatoes sliced in half
  • Mushrooms sliced
  • Spinach roughly sliced
  • Bacon
  • Breakfast sausage
  • Sour cream
  • Eggs
  • Green onions diced
  • Mild cheddar cheese shredded

Instructions

  • In a large pan cook your sausage and bacon. Set aside on a baking tray covered in aluminum foil to keep warm.
  • In a second large pan cook your tomatoes and mushroom in a tablespoon of oil. Set aside in a casserole dish covered in aluminum foil to keep warm.
  • Cook your tater tots in the oven according to the package directions.
  • Put out small baking dishes and have guests arrange their loaded tater tots with toppings.
  • If they want to add egg, they can crack it over the top.
  • Add all dishes that contain fresh spinach, egg, or cheese back into the oven to melt the cheese and wilt the spinach. Note: if they have cracked an egg, it will need to remain in the oven for approximately 10-minutes until the whites of the egg are cooked through.
