Can you believe that it’s practically July already!  I know there’s about a week and a half left in June, but I can’t believe that we’re already halfway through the year and that the first month of summer is over!  I feel like summer’s only been here for a quick moment, and while I know that there’s still two full months ahead of us, I can’t help but think that it’s going by too quickly.  In any case, let’s take advantage of all that’s left in summer and make the most of it, starting with the Fourth of July!

I’ve always loved July 4th, mostly because I love anything that has to do with cookouts and barbecues; I’m obsessed with hamburgers, hot dogs and ice cream; I think fireworks are the greatest form of outdoor summer entertainment.

I really love getting to spend Independence Day on Long Island because I feel like I have the best Fourth of July set up possible.  I can go to the beach in the morning and early afternoon, have a barbecue for dinner, and then I can watch amazing fireworks right from the comfort of my front stoop.  I’m really lucky that a few of the families that live a block away from me always do fireworks every year.  I have perfect views of the fireworks every single year without having to leave my house!

While I love the beach and fireworks, I think that my favorite part about the Fourth of July is definitely the cookout/barbecue part. It’s no surprise that I’m a foodie! I just love being able to eat outdoors, and I love having an opportunity to make my food look festive. This year, I decided to use my love for cookouts as a starting point for my Fourth of July desserts- they need to be easy to prepare, delicious, and of course, festive! I thought that making some mini tartlets and decorating them to look like the American flag would be a great option. I made a simple tart filling by mixing together instant white chocolate pudding (vanilla would also work!) and whipped cream, and then filled lots of pre-made mini phyllo tart shells with the cream filling. Then, I simply arranged the tarts in a big rectangle and decorated the tops with some fresh blueberries and strawberries to make the tartlets resemble the American flag. So easy, and so delicious! This dessert is perfect for your backyard Fourth of July parties because it’s so easy to prepare, can be made in advance, and is perfectly fitting for any patriotic occasion.

Mini Berry Flag Tarts

Ingredients

42 mini phyllo shells, thawed

1 box instant white chocolate pudding, prepared

1 cup whipped cream

fresh blueberries and raspberries

Method

In a bowl, fold together the prepared white chocolate pudding and whipped cream.  Leave in the fridge until ready to use.

To assemble the tarts, arrange the mini phyllo shells on a baking sheet or large rectangular serving platter in a 6 x 7 pattern.  Fill each mini tart shell with about a tablespoon of the prepared pudding and cream filling.  Decorate the tops of the filled tart shells with fresh blueberries and thinly sliced strawberries to create the stars and strips of the American flag.  Refrigerate the tart shells until ready to serve.  Enjoy!
