Loaded Carne Asada Fries Recipe for Game Day

When I lived in California, one of my favorite take-out meals was a California Burrito, which essentially is a burrito filled with carne asada and French fries. I thought a re-make of the delicious dish as loaded fries would be perfect for watching the big game this year.

  • French fries
  • Shredded cheese
  • Tomato
  • Green pepper
  • Red onion
  • Green chilies
  • Guacamole
  • Mexican Crema
  • Lime
  • Cilantro

How to make carne asada fries

Think of loaded Carne Asada Fries as being similar to nachos. You can add all kinds of yummy ingredients on top of the crispy French fries including salsa, beans, fresh avocado, and so much more. I’m going to walk you through what we added to ours.

Carne asada meat

The Carne Asada Meat is the primary topping (next to the cheese, of course). Carne asada is most often made with flank or skirt steak. I normally buy it pre-marinated because it makes the process go so much quicker, but occasionally when I can’t find it, I marinate it and then refrigerate it overnight. All you need to make your own marinade is orange juice, jalapeno, black pepper, vegetable oil, lime juice, and fresh cilantro. A lot of these ingredients you will already be using for your toppings.

Grill your carne asada meat over high heat for up to 10-minutes on each side, and then let it rest for 10-minutes before slicing it against the grain.

Loaded fries

Once the meat starts cooking, spread the fries onto a baking tray and cook according to the directions on the packet minus 5-minutes.

Pull the fries out of the oven, sprinkle cheese, and chopped green pepper over the top. Put the tray back into the oven for another 10-minutes until the cheese is melted. We use a Mexican-style melting cheese that is our favorite for quesadillas and burritos too.

Fresh ingredients

While the loaded fries are back in the oven you’ll have time to whip up a fresh salsa. I prefer a fresh salsa, but if you ask my kids, they’ll tell you they prefer a jar of restaurant-style salsa that isn’t all ‘chunky’. So, I normally have both on hand. You can also make this salsa ahead of time and refrigerate it until you are ready to use it, which is what I did.

For this fresh salsa though I add tomatoes, red onion, lime, cilantro, pepper, and a couple of tablespoons of canned green chilies.

Assembling loaded fries

If you use baskets, as we did, serve the fries into the baskets. Top with the carne asada meat, fresh salsa, lime wedges, guacamole, and Mexican Crema. You can add more fresh cilantro too if you like. Serve immediately!

Ingredients

  • 2 lbs Carne asada meat preferably pre-marinated skirt or flank steak
  • 2 lbs French fries
  • 2 cups Mexican melting cheese
  • 1 Green bell pepper
  • 3 Tomatoes
  • 1/2 Red onion
  • 2 tbsp Green chilies canned
  • 1 Lime Additional limes for serving
  • 1 bunch Fresh cilantro
  • Guacamole for serving
  • Mexican Crema for serving

Instructions

  • Grill the marinated carne asada meat for no more than 10-minutes on each side. Allow it to rest for 10-minutes before slicing against the grain.
  • Oven-bake the French fries according to the package instructions but pull them out 5-minutes before they are done cooking.
  • While the meat and French fries are cooking, chop your red onions, bell pepper, and tomatoes.
  • Top the French fries with the shredded cheese and bell peppers, and then return the tray to the oven for 10-minutes.
  • Prepare your fresh salsa by combining tomato, red onion, and green chilies in a bowl. Add the juice from one lime, and 1/2 a cup of fresh (chopped) cilantro. Gently toss to combine.
  • Put the loaded fries into baskets and top with carne asada meat, fresh salsa, guacamole, Mexican Crema, fresh lime wedges, and more cilantro.
  • Serve immediately.
