Theater of Yugen presents the 2017 Fermentation Symposium – an immersive multi-sensual dining experience crafting a new kind of live performance and culinary event. It’s where Japanese cuisine meets science and dance. Each ticket includes a tasting menu. VIPs drink for free.

Disparate forms of performance have been brought together and served alongside the dishes that inspired them, creating a truly theatrical experience using all five senses and with the aesthetic quality of yugen.
Tasting menu items scheduled to include Tofu Datemaki (traditional New Year food), Kabura-sushi (Turnip and salmon Koji pickles. Traditional winter food), Miso Dengaku (tofu or simmered daikon with miso sauce), Zouni and more. Please note tasting menu items are subject to change
