Thinking about all we love about the Summer, one of our favourite things has to be embracing a more informal way of eating. BBQs, picnics, sharing platters – all alfresco with delicious fresh ingredients and a great big dollop of sunshine.

So, here’s a few of our easy Summer Recipes that we hope will become family favourites.

Scotch Egg Recipe

If you’re packing up a picnic, why not make a contemporary twist on everyone’s favourite – the humble scotch egg. Guaranteed to surprise and delight, these thai-spiced scotch eggs are not only easy to make, but chicken’s eggs can be replaced with quail’s eggs for a more dainty and genteel version. Delish.

Yummy Gazpacho

Something else your fellow picnickers won’t be expecting is a yummy gazpacho shot. Perfect for a hot sunny day, this refreshingly chilled soup-cum-cocktail tastes even better if it’s made from tomatoes harvested from your own garden.

Sea Food Sharing Platter 

We reckon there’s something special about sharing a platter with friends. This summer, forget the traditional cheese or charcuterie board and go fishy, with a tasty mix of smoked salmon, mackerel, and trout. The spiced cucumber salad with this recipe, courtesy of BBC Good Food, is a fantastic accompaniment, cutting through the richness of all this beautiful fish. An easy summer recipe and one to be enjoyed when looking out to sea.

Tasty BBQ Sardines

Keeping on a fishy theme, why not make Rick Stein’s tasty sardines the star turn of your next BBQ?

Packed full of flavour, sardines are sustainable and a great alternative more expensive fish. When marinated as Rick suggests with lemon zest, rosemary, garlic, olives and capers, these will have everyone coming back for more.

Subtle Elderflower Cheesecake 

And then for a summer desert. This was really hard to choose, so we’ve opted for two: a deliciously subtle elderflower cheesecake and sunshine on a stick, in the form of a Pimm’s ice lolly. Perhaps it would be rude to choose between the two.
