A Simple and Fun Blueberry Cheesecake Recipe for Kids


Ingredients:


  • 1 1/2 cups of graham cracker crumbs

  • 1/2 cup of melted butter

  • 2 cups of fresh blueberries

  • 2 tablespoons of cornstarch

  • 3 packages (8 ounces each) of cream cheese, softened

  • 1 cup of sour cream

  • 1 teaspoon of vanilla extract

Instructions:


  1. Preheat the Oven: Set your oven to 325°F (165°C). This is a great step for kids to learn about kitchen safety.

  2. Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs and melted butter. Press this mixture into the bottom of a 9-inch springform pan. Kids will love using their hands to press the crust into place.

  3. Make the Blueberry Sauce: In a saucepan, combine 1 cup of blueberries, 1/2 cup of sugar, and 2 tablespoons of cornstarch. Cook over medium heat until the mixture thickens, stirring constantly. Let it cool.

  4. Prepare the Filling: In a large bowl, beat the cream cheese until smooth. Add the remaining 1/2 cup of sugar, sour cream, and vanilla extract, and mix well. Add the eggs one at a time, beating just until blended.

  5. Assemble the Cheesecake: Pour half of the cream cheese mixture over the crust. Spoon half of the blueberry sauce over the cream cheese layer. Repeat with the remaining cream cheese mixture and blueberry sauce. Kids can have fun creating swirls with a knife or spoon.

  6. Bake: Bake the cheesecake for about 50-60 minutes, or until the center is set. Allow it to cool in the oven with the door slightly open for about an hour. Then refrigerate for at least 4 hours before serving.

  7. Decorate and Serve: Top with the remaining fresh blueberries before serving. Kids can enjoy arranging the blueberries in fun patterns!
