Easy Pumpkin Granola Recipe – Thrifty Jinxy

This Easy Pumpkin Granola Recipe combines pumpkin puree and pumpkin spice for a delicious fall granola you’ll want to eat all year long.

With fall upon us, it’s time for all things pumpkin! But, I’m not quite sure why we tend to keep pumpkin flavored foods relegated to the fall.

Sure, autumn is when pumpkin comes into season, but since most of us use canned pumpkin in this day and age, we can really have it ANY time of year.

And if you happen to want to take advantage of those fresh pumpkins during the season, you can use our easy Instant Pot Pumpkin Puree recipe to make your own.

To add to the roster of DELICIOUS pumpkin foods, we have an Easy Pumpkin Pie Granola Recipe. With both pumpkin itself and pumpkin pie spice, along with nuts, it really gives you the taste of autumn in a bowl!

This pumpkin pie granola is perfect just as it is for breakfast with a little milk, topping yogurt or cottage cheese, on a fall charcuterie board, or for an anytime snack.

Homemade granola is also great in a yogurt parfait or sprinkled on top of ice cream.

Whip up a batch and put it in Mason jars tied with a pretty ribbon as holiday hostess gifts or as little place setting favors at your Thanksgiving dinner. It’s very versatile!

Why This Recipe Works

Easy to Make – There are only a few very basic steps to make pumpkin granola. It’s truly easy.

Simple Ingredients – All of the ingredients can easily be found in your grocery store. If you like to have it be “more homemade” use our recipes in the Pro Tips section to make your own pumpkin puree and pumpkin spice mix.

Versatile – While the recipe is perfect as-is, you can use switch out some of the ingredients to make your own custom mix. You can also leave out the raisins and almonds all together to make a classic pumpkin pecan granola.

Great for Gifts – Package up your granola in a pretty tin, in a Mason jar tied with ribbon or in any container and give it as a hostess gift or holiday present.

Ingredients Needed

  • Rolled Oats – Also called old-fashioned oats, rolled oats are thicker and chewier than other varieties and old up well when baking.
  • Maple Syrup – You’ll want to use real maple syrup rather than imitation pancake syrup.
  • Pumpkin Puree – Be sure to use 100% pumpkin puree and not pumpkin pie filling. You can also use our homemade pumpkin puree recipe.
  • Vegetable Oil – Canola or olive oil are both good options.
  • Pumpkin Pie Spice – You can buy this right at the supermarket or mix up your own cinnamon, ginger, nutmeg and allspice in our pumpkin pie spice mix recipe.
  • Raisins – You can use regular raisins, use golden raisins instead or opt for both.
  • Pecans and Almonds – I use unsalted nuts. If you end up using salted, leave out the added salt when mixing your granola.

Variations

You can mix and match ingredients to create your own custom granola mix. Just keep the total amount of add-ins to just over one cup. Here are a few ideas:

  • Pumpkin Seeds (Pepitas)
  • Golden Raisins
  • Coconut Flakes
  • Mini Chocolate Chips
  • Dried Cranberries
  • Sunflower Seeds
  • Walnuts or Cashews
  • Other Dried Fruit

How to Make

Preheat oven to 350. In a mixing bowl, combine the oats, maple syrup, pumpkin, oil, spice and salt.

Spread mixture out on a non-stick baking surface in a thin layer. (I like to use a cookie sheet with a silicone liner.) Bake for 15 minutes.

Break up the oats and bake for another 10 minutes. Cool completely before adding raisins and nuts.

Stir in the raisins and nuts and store in airtight container.

Pro Tips

Make it More Homemade: This recipe calls for canned pumpkin puree, but you can also make your own homemade with our easy instant pot pumpkin puree recipe. You can also make your own pumpkin pie spice mix 

Bigger or Smaller “Clumps”: If you like big clumps in you granola you can increase the amount of syrup used and not spread out the granola as much on the baking sheet. If more pieces of oatmeal are touching each other while baking they can stick together into clumps.

Watch Carefully: If your oven runs on the hot side it’s easy to go from golden granola to slightly burned in just a few minutes, so keep an eye on it during the last 10 minutes of cooking.

How to Store Homemade Granola

Place your pumpkin spice granola in an airtight container. It will keep at room temperature for several weeks.

For longer storage you can freeze your homemade granola (again in an airtight container) for 6 months or more.
