Paleo Gingerbread Mug Cake – The Roasted Root

Paleo Gingerbread Mug Cake tastes like your favorite rich, moist gingerbread treat, but is made in less than five minutes! This easy single serve mug dessert comes together in a flash and is grain-free and refined sugar-free.

A reader requested a recipe for a gingerbread mug cake not too long ago and I thought it was such a marvelous idea that I had to jump all over it.

Why didn’t I think of this, myself?

Gingerbread in any form is a treat from the heavens, and I’m wildly obsessed with it as soon as the fall hits and I begin craving all the warm spices.

I can understand why gingerbread can be polarizing. Molasses is one of those ingredient you either adore or abhor, so if you’re on team adore, you’re in for a real treat!

Mug cakes couldn’t be any easier to make and they’re brilliant for those of us who love a sweet treat but don’t want to put forth the effort into making a whole dessert OR are trying to control our portion size.

This warmly-spiced gingerbread mug cake is absolute perfection in the way of flavor, texture, and satisfaction.

Scoop a mini scoop of vanilla ice cream on top for a real good time!

Here’s what we need to make it happen.

Paleo Gingerbread Mug Cake Ingredients:

Almond Flour

Molasses

Pure Maple Syrup

Baking Soda

Sea salt

Pumpkin Pie Spice

Melted Butter

Egg Yolk

Let’s nuke one already!

How to Make Paleo Gingerbread Mug Cake:

Add all of the ingredients for the mug cake to a microwave-safe mug. Stir well until combined. The mixture will be very thick.


Microwave for 50 to 60 seconds (I do 60), or until the cake has fluffed up substantially.

If desired, serve with a scoop of vanilla ice cream. Enjoy!

  • 1 Tbsp pure maple syrup
  • 1/8 tsp baking soda
  • 1/4 tsp pumpkin pie spice or ground cinnamon
  • Pinch sea salt
  • 1 Tbsp melted or butter or ghee
  • 1 egg yolk
