Whipped Ricotta Toast (6 Ways)

Whipped Ricotta toast is the perfect quick breakfast or satisfying snack. Creamy ricotta paired with sweet or savory toppings – like avocado, strawberries, or honey – is always crave-able!

Ricotta toast is seriously so delicious, and I’m obsessed with all the flavor combinations you can make. I’m sharing six different topping ideas here!

I think my favorite is the heirloom tomato ricotta toast with the strawberry balsamic being a close second, but they’re all so good.

What is ricotta cheese?

Ricotta is a soft and mild fresh Italian cheese that becomes creamy when whipped. Most commonly, it’s made from cow’s milk. Like most cheese, it’s a good source of calcium and other vitamins and minerals.

It’s often used in lasagna, on pizza, in dips, and even in desserts like cheesecake. It also makes pancakes super fluffy (like these amazing lemon ricotta pancakes with blueberry topping!).

And of course, it’s incredible simply spread on toast!

How to Make Ricotta Toast

Making this toast is super simple. Just whip up your ricotta to make it nice and smooth (instructions in the section below), then spread it over toasted bread.

Lastly, add your desired toppings, and enjoy! Freshly ground pepper and/or honey (or hot honey) are delicious additions, too.

How to Whip Ricotta Cheese

Whipping ricotta is easy! You just need ricotta and a stand mixer/hand mixer, or a whisk and some arm strength.

First, make sure to drain any excess liquid from the container. Next, scoop the ricotta into a bowl. Using a stand mixer or hand mixer, whip for 2 minutes, until the ricotta is smooth.

If you don’t have a stand or hand mixer, you can mix vigorously with a whisk for 3-4 minutes instead. Feel that arm burn!

Whipping ricotta doesn’t change the texture dramatically or turn it into whipped cream-level fluffiness, but you can tell it’s “done” when the edges of the ricotta are smooth instead of crumbly.

It’ll also dollop and spread nicely, whereas ricotta fresh out of the container is too thick and crumbly to spread easily. If you want to skip the whipping step, that’s cool, but just know it will be crumbly on your bread! 

What type of bread is best?

I love using a seeded bakery-style loaf for my Ricotta Toast, because it has a delicious nutty flavor. The contrast of crunchy seeds with creamy ricotta is just divine.

But, any type of bread that you can toast will work!

Recipe Ingredients

For whipped ricotta toast, you’ll need:

  • ricotta cheese
  • sliced bread
  • desired toppings (inspiration pictured below)
  • desired flavor enhancers (salt, ground black pepper, honey, fresh basil, fresh mint, etc.)

Ricotta Toast Flavor Variations

One you’ve got your whipped ricotta on toast, here are some topping variations to try to jazz it up!

Whipped Ricotta Honey Toast

Drizzle with honey, then sprinkle with salt and freshly ground black pepper. Simple, but super tasty!

You can also try this with “hot honey”, which is all the rage lately – it’s just honey mixed with chili flakes or red pepper flakes, and heated so it is infused. Here’s a recipe you can try if you want: homemade hot honey.

Heirloom Tomato Ricotta Toast with Basil

Top with sliced juicy tomatoes (heirloom tomatoes are my favorite here – aren’t they amazing right now in peak summer?!) and fresh basil leaves, drizzle with olive oil, and sprinkle with salt and freshly ground black pepper.

This is basically a riff on the classic tomato basil mozzarella combination (or my favorite, Caprese Salad with Peaches added) and it’s just as delicious with ricotta instead of mozzarella! 

Balsamic Strawberry Toast

Top with sliced strawberries and fresh basil leaves, drizzle with balsamic vinegar or balsamic glaze, and sprinkle with freshly ground black pepper.

I LOVE the strawberry and balsamic combination and this variation did not disappoint.

Savory Ricotta Avocado Toast

Top with sliced or mashed avocado, drizzle with olive oil, and sprinkle with salt and freshly ground black pepper.

Because let’s be honest, you can never go wrong with avocado in the mix. 

Peach Ricotta Toast with Mint

Top with sliced peaches and fresh mint leaves, then drizzle with honey. You’re welcome.

Cucumber Toast with Whipped Ricotta

Top with thinly sliced cucumber, drizzle with olive oil, and sprinkle with salt and freshly ground black pepper.

I love the fresh crunch that the cucumber adds here!

More Topping Ideas

Looking for even more ricotta toast topping inspiration? Ricotta pairs well with practically anything, so the possibilities are endless! Here are some ideas:

  • roasted corn
  • pesto
  • chopped nuts (pecans, walnuts, toasted hazelnuts, etc.)
  • chia jam
  • sunflower seeds
  • figs
  • pickled watermelon rind or fermented watermelon rind 
  • prosciutto
  • sliced jalapeno
  • pumpkin seeds
  • berries (raspberries, blackberries, blueberries, etc.)
  • smoked salmon

If you’re looking for a super filling toast, adding a fried egg to any of the savory toasts would for sure turn it into a delicious meal!

Ricotta toast and avocado toast are both tasty, nutritious snacks to have on hand – packed with healthy fats, vitamins, minerals, and staying power! Plus, there are so many ways to enjoy them.

6-8 toasts (2 cups of whipped ricotta)

Ingredients:

  • 1 pint whole milk or part-skim ricotta
  • 6-8 toasts
  • desired toppings* (see notes)

Instructions:

  1. If your ricotta has any separated liquid in the container, drain the extra liquid. It may seem like the remaining ricotta is too thick to whip, but it will thin out as it whips.
  2. Place the ricotta in a mixing bowl or the bowl of a stand mixer. Using the whisk attachment on a stand mixer or hand mixer, whip for about 2 minutes, until the ricotta is smooth around the edges and spreadable. If you don’t have a stand or hand mixer, you can use a whisk and whip the ricotta by hand for 3-4 minutes to achieve the same results.
  3. Spread whipped ricotta over toasted bread. Add desired toppings and enjoy!
