  3. Beat the small egg and 1 tablespoon of water together to create an egg wash. Brush the edges of each pastry square with the egg wash.
  4. Fold each square diagonally to create a triangle, enclosing the apple filling. Use a fork to crimp and seal the edges securely.
  5. Brush the tops of the turnovers with the remaining egg wash, and make a couple of small slits on the tops.
  6. Place the turnovers on the prepared baking sheet and bake in the preheated oven for 20-23 minutes, or until the turnovers are puffy and golden.

Ingredients

  • 2 sheets of store-bought puff pastry or make 1 batch of my Rough puff pastry instead
  • 500 g firm apples peeled, cored, and diced into ¼” cubes
  • 2 tablespoon unsalted butter
  • 80 g white sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon

Egg wash

  • 1 small egg
  • 1 tablespoon water

Instructions

  • In a skillet, melt the butter over medium heat. Add the sugar, salt, vanilla extract, and ground cinnamon. Mix well.

  • Once baked, remove them from the oven and allow them to cool down slightly until they are warm to the touch.
