Rum & Campari Champagne Cocktail

A twist on the Classic Champagne Cocktail, this Rum & Campari Champagne Cocktail is a bit more mellow with Rum & Campari in place of Cognac & Angostura Bitter. But don’t worry, the Champagne is still there!

Have you had a Classic Champagne Cocktail before? It’s a beautiful, easy & delicious champagne drink dating back to at least the mid-1800s – likely one of the oldest cocktails we’re still drinking today. And no wonder!

How to make a Champagne Cocktail

As dangerous as it is delicious a Champagne Cocktail is basically a spiked glass of Champagne. In the classic version, a sugar cube is saturated with Angostura Bitter before being added to a glass together with some cognac, after which the glass is filled up with Champagne. Some say it’s a crazy use of good Champagne – I say it’s delicious, and therefore not crazy at all.

That being said – you can use a dry Cava or other sparkling wine as well. I doubt anyone will taste the difference!

OK – on to my version of the classic cocktail. Trying for a bit of a mellower taste (as well as – at least in my house – a bit more common ingredients) I used Campari instead of Angostura Bitter, and rum instead of cognac. It’s delicious and close in taste to the classic, albeit a bit less spicy due to the use of Campari instead of Angostura Bitter. The sugar cube is still there, the Champagne (or other dry sparkling wine) is still there, and it’s still the perfect welcome cocktail for any dinner party.
