Easy Instant Pot (or Slow Cooker) Recipes You’ll Want to Make This Winter

A staple in many kitchens, the Instant Pot is a seven-in-one multi-cooker with the functionality of an electric pressure cooker, slow cooker, rice cooker, yogurt maker, steamer, warmer, and sauté pan. All in one easy to use appliance.

A friend on Facebook today was querying friends, asking if anyone had tried the Instant Pot as she was considering replacing her crock pot with one. The comments were instant and favorable. One replied, “What’s a crockpot,” facetiously, of course. Another said she couldn’t live without hers. Still more said they make almost every dinner in theirs.

In case you’ve recently acquired an Instant Pot or are wanting some fresh inspiration of delicious dishes to make in one — check out the ideas below!

Tomato-Braised Lentils with Broccoli Rabe

“Since this dish is so healthful — packed with plant-based protein and fiber from the lentils, and topped with an elegant bundle of vitamin-rich greens — you can afford to coddle it with some butter, too. I started by using the sauté setting on “normal” (which seemed similar to a medium to medium-high flame on the stovetop) to cook the onion and garlic inside the pot. Then, I stopped cooking, added the remainder of the ingredients, closed the lid, used the electric pressure cooker to finish the process, and used the warming function to hold it until dinnertime. Instead of 30 minutes, my dinner was ready in less than half the time. It was so easy, I felt like I must be forgetting to do something. This works great as a vegetarian entrée if you’re entertaining, or for going meatless more often without sacrificing protein.”

Slow Cooker Tikka Masala

“I didn’t think chicken tikka masala could really get much better, but then I remembered my fall-time best friend: the slow cooker. This is a curry dish that benefits from a nice, long simmer anyway, so why not let that happen while I’m off doing other things? That’s what I call smart cooking.

Spooned over some steamed rice, this easy slow-cooker tikka masala is about to make your busy fall days very happy indeed.”

Instant Pot Salsa Verde Chicken

15-Minute Risotto

“Risotto is one of those delicious dishes that not enough people make at home because it has a reputation for being fussy and time-consuming. If you make it the traditional way, you have to spend about 20 to 30 minutes at the stove, all of it hands-on time as you stir and add stock, stir and add stock, stir and add stock.

What about a delicious, creamy risotto in about 12 to 15 minutes that includes some precious hands-off time? If that interests you, then you’ll want to try making risotto in a pressure cooker! Read on for the recipe.”

 Cheddar Broccoli and Potato Soup
