  • Chicken – We prefer to use chicken breasts, but if you want a little extra fat and flavor thighs would be great as well. 
  • Veggies – A combination of red and green bell peppers along with onions makes this recipe not only pretty but so good for you, too. 
  • Seasoning – Garlic cloves, taco seasoning, salt, and pepper combine to create a little spice and enhance the savoriness of this dish. To save time, we use store-bought taco seasoning packets, but you could also create your own with a recipe like this
  • Rice – We prefer long-grain white rice like Basmati or Jasmine, but feel free to use whatever you like best. 
  • Water – This is crucial to creating soft, fluffy rice. Or, if you want to really boost the flavor, try using chicken broth instead.

How to Make Fajita Seasoned Rice

  • 2 pounds chicken breast (diced)
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 1 red onion (chopped)
  • 3 garlic cloves (minced)
  • 2 Tablespoons taco seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 2 cups rinsed rice
  • 2 1/2 cups water
  • Optional: cilantro and lime juice for garnish
  • In a large pot, sauté the chicken, onion, garlic, taco seasoning, and salt over medium heat, stirring to combine. Cook until chicken is no longer pink.
