No bake pumpkin spiced chocolate pecan pie bites! Say that 3 times fast. Just kidding. But pumpkin spiced chocolate plus pecan pie flavor in a no bake bites recipe cannot be beat!  Healthy, gluten free, grain free, vegan, paleo friendly, and perfect for holiday desserts or easy snacks! So worth making and drooling over! 

Happy Friday! I have to end the week on a high note, since it’s kinda been a long one here folks. Yes, that type of week. But needless to say, today is about celebrating all things PUMPKIN (like last Friday), FALL, and Healthy bites.

But first, let me tell you story about pumpkin spiced healthy bites and how I actually came to make these. I promise it’s a good story, and you’ll laugh (at me). Mmm k?


You see, 2 years ago, when I used to ship Healthy Bites, I made a dark chocolate Pumpkin Spiced  Healthy Bite for November’s flavor of the month.  In fact, I think you can still see the photo on my old Healthy Bites Facebook fan page. Anyway, so many local and regulars that I shipped to LOVED this flavor! I though I was genius. Real original, right? Haha, kidding. But then my genius thinking decided to host a Black Friday Special for these pumpkin spiced bites. Yes, a $5 special on each box.


I remember the exact day and where I was when I decided to promote this. I honestly thought I’d get like 10 orders. So no big deal, right?

That was until people started sharing it and then all of a sudden my inbox flooded. Over 150 orders and close to 2000 bites rolled and all by the end of the weekend. HOLY MOLY!

I begged my best friend and husband to help. I payed them in wine and samples. I am pretty sure I bought all the pumpkin spice there was at our local grocer, along with cocoa powder. I also developed carpel tunnel syndrome after rolling all those by hand. Kidding. I didn’t. But I did get hand cramps.

But wait, there’s a point to my story.


Remembering that story, I think I should recreate the pumpkin spiced chocolate bites recipe, but be more practical about it, ya know?

I mean people like Pumpkin. People like chocolate (duh). And people especially like when both are made healthy. Oh, and people like FALL flavors and a good deal. Duh!

Pumpkin Spiced Chocolate Pecan Pie Bites

Description

Pumpkin Spiced Chocolate Pecan Pie Bites {Grain Free}



Instructions

  1. First, if you have a large pieces of granola, mix it in a blender a little to get a more fine consistency.
  2. Then, in large bowl, add in all your dry ingredients.
  3. Then mix in your nut butter, extracts, and last the honey. Mix well (I use my hands).
  4. 1 tbsp of coconut flour or extra protein ONLY if batter is too runny.
  5. Roll into bite size balls. You can then roll bites in the extra protein/cinnamon powder after you roll. Makes about 22-24 balls.
  6. Feel free to roll into larger bites, or smaller to make more.
  7. Add more honey/nut butter if they end up being too dry to roll. Just depends on type of protein you use.
  8. Freeze or keep in refrigerator to maintain freshness.
  9. Once frozen, sprinkle with extra pumpkin spice and store in ziplock bag.

Notes

1/4 tsp butter extract is optional. But it does help bring out the buttery pecan flavor.

To make it paleo, use chocolate cocoa powder versus protein. a heaping 1/3 cup. or grassfed whey protein.
