Indian Traditional Cuisine Of The Northern And Southern Regions

The difference between the Indian Traditional Cuisine of the northern and southern regions does not even scratch the surface of the diversity of the country’s cuisine. The nuances in Indian traditional cuisine are even clearer when you will compare the preparations of similar recipes from neighboring states.

Some dishes are mentioned here which have traditional value with Indian traditional cuisine of Northern and  southern regions:

The northern India cuisine:

The northern zone of India is fortunate to be the hub of exotic recipes of cuisines. Foodies love to visit this place in India. Many of these recipes are famous all over the world and renowned by them.

Mughal cuisine is the most famous cuisine in this zone. Delhi (the national capital of India) is the best place to enjoy this cuisine. Old Delhi is mainly famous for Mughal recipes (especially for non-vegetarian).

Mughals have added the touch of royalty in their recipes. They were very serious about their food and gastronomic requirement. They use a generous amount of spices, dry fruits, etc in their food recipes. Roasted meat dishes in the tandoor taste delicious. Like Seekh-kabab, tandoori chicken tikka, tandoori chicken, etc.

Lucknow is the city of Nawabs and the capital of state Uttar Pradesh. They have Awadh style of cooking which is famous for royalty and spiciness’. They have a high fan following for their unique recipes.

In Awadhi cuisine, there is a method for cooking non-vegetarian food in handis on a slow fire called ‘Dum Pukht’. Like Shami kebabs, Murg mussalam (whole chicken), dum biryani, etc are prepared by the dum process. These foods are rich in taste and aroma.

Wazwan is a well-known tradition in Jammu Kashmir which has an aromatic banquet. This consists of over 36 varieties of dishes. Most of them are non-vegetarian recipes such as rogan-josh, rista, etc. 

Punjab is a state which is rich in tradition when it comes to food. They don’t even need an introduction because their food recipes are famous around the globe. Some dishes such as makke-di-roti with sarso-da-saag, get served with a big glass of Lassi. The food of Haryana is almost the same as Punjab which is rich in butter and spices.

Cuisines from hilly regions like Himachal Pradesh and Uttarakhand are famous for their simplicity. They have a huge variety in recipes of lentils. However, people in the northern zone of India prefer to eat vegetables, rice, lentils, chapatti with salad for their everyday meal. Some people give priority to non-vegetarian food like chicken dishes.

4. The southern India cuisine:

The southern zone of India is famous for its hot and spicy dishes. Spices like cinnamon, nutmeg, pepper, cardamom, and cloves. In the past, they are witnessed to export the spices for too many countries. They are famous for the availability of coconut and a variety of fishes. Their specialty is that they cook their food in coconut oil.

Andhra Pradesh is the home of the Nizams (rulers of Hyderabad) and their food is rich in flavor. Their food tastes ranging is from spicy to sour to sweet. They have rich flavor because of the uses of nuts, dried fruits, and exotic spices. Grilled kebabs, biryani, etc are the famous food of this place. Famous food of Andhra Pradesh is Dosa and Idli with Sambhar, and combination of rice with curry, etc. 

Kerala is also a state of the southern zone of India. Fish is the main food of this state with steamed rice of large grains. Jackfruit and banana are very common to eat here. Banana chips and jackfruit chips are liked by outsiders.
