Finnish startup Solar Foods has debuted its sustainable, microbial Protein Solein in a vegan chocolate gelato at restaurant Fico in Singapore. The product, made using just air, water and electricity, has 65%-70% protein content and offers a reliable, land-free source of edible protein that could help reduce dependence on farmland for food production. The startup is aiming to partner with food industry players to bring commercial-scale production online and has already gained regulatory clearance for the product in Singapore and filed for clearance in the US and Europe.
