Whether you’re a mom with three kids who have to be at school by 8, you’re trying to live up to your New Year’s resolution by working out before heading to work (or both!), it’s difficult to find time in the morning to make a healthy breakfast. It becomes less of a priority. You end up grabbing a pop-tart, coffee, or simply going without.
But you can absolutely keep your morning routine AND have a healthy breakfast with this delicious mini-frittata recipe. (And it tastes great, too!)
What You’ll Need
- 12-Cup Muffin Pan
- Spray or oil to coat the pan
- 8 Eggs (or egg whites)
- 1/2 Cup Shredded Cheese of choice
- 1/4 Cup Milk
- Pinch of Salt
- Pinch of Pepper
The following Ingredients vary based on preference. Rule of thumb, 1/4 Cup of each selected ingredient, chopped. Ingredients you could use but are not limited to…
- Red and Green Peppers
Also, if you have a favorite omelette recipe, you can apply those same ingredients such as a Greek Omelette or Western Omelette.
What to do
- Preheat oven at 350°
- Coat your pan
- Whisk all ingredients together until evenly mixed
- Fill each cup with mixture, leave a little room at the top
- Bake for about 20 min or until eggs are fully cooked throughout (you can check with a toothpick)
- Let sit for 10 minutes
- Refrigerate for the rest of the week (freeze for long time use)
The morning of, you have two options, to either re-bake or microwave. If you re-bake, it will take longer, allow yourself an extra 10 min or so. Preheat the oven when you wake up at 350, place the tray in for about 10 min, or until Desired Temperature. If you choose to microwave your Frittatas, remove x-number of Frittatas To Go from the pan, place them on a microwavable dish and let cook for a minute or until desired temperature.
