Healthy breakfast

When you're in the rush, I'm sure you hate to choose between eating something healthy or just grabbing the first thing out of the fridge (which is usually something, that's not so healthy)

I have been in that situation during high school, when at 5:30am you're half dead, half alive and you should eat something, but who the hell wants to be Jamie Oliver, when you can barely find the kitchen.

Since I'm no longer a high school student, yes, I have time in the morning to eat properly, and kinda healthy. But it doesn't mean that I love spending hours in the kitchen, trying to do the fanciest meal the world has even seen.

So this morning I woke up in the mood for something new, healthy & quick. My mom just bought a pack of these incredible famous chia seeds, so I knew I wanna do something with them. 

My breakfast recipe:
- 1 cup of rice milk (any plant milk should work)
- 1 banana
- 1/4 cup of oats
- 1 apple (cored & peeled)
- 1 1/2 tps of cinnamon
- 1/4 cup of chia seed

1. Mix the chia seeds with the milk & to get a light, tapioca-like pudding (this requires approx. 15mins, so let it sit in the fridge until that)

2. While you're waiting for your chia seeds to expand, prep the other ingredients. Put the cored & peeled apple with the banana into a bowl, add the cinnamon and the 1/4 cup of oats and blend them until it gets smooth. (I put chia seeds into this mixture as well, but it's optional)
Put this into the fridge as well

3. Prep the strawberry puree: reduce a cup of strawberries down in a pan on a low heat with a tbs of water & a little coconut sugar (better than normal, refined sugar) until you have a nice puree consistency. (when I was almost ready with the layering process I used jelly to make sure the strawberry layers won't soak the others, but this is optional as well)

4. Start the layering with the chia seeds, then strawberry puree (if you use jelly, be sure it's completely solidified, unless it will be messy), then the banana-apple-oat layer, then strawberry puree again on the top with some fresh strawberries and grained almond.
