Try This Healthy Veggie Nacho Recipe This Weekend

Nachos are one of our all-time favourite comfort foods, which is why we love this super-healthy take on the recipe. 

They’re so easy to whip up and deliciously nutritious. Give them a try this weekend.

What you need:

1/2 cup black beans (drained and rinsed)
1/2 cup crumbly feta cheese
1/2 cup cherry tomatoes
1 avocado (diced)
1 lime (cut in wedges)
6 corn tortillas (Trader Joe’s are the cleanest ones I have seen)
Olive oil
Sea salt
Greek Yogurt


How to:

First, prepare the tortillas by cutting them into 8 triangular pieces. Drizzle them in a little olive oil, sprinkle a little salt and a squeeze of lime over them and  bake them on a sheet of tinfoil at 180 degrees for about 25 minutes until they’re golden brown and crispy.

Take them out of the oven and pop the black beans and crumbled feta over them. Bake them again until the cheese melts.

Meanwhile, mash avocado with a squeeze of lime juice and black pepper in a bowl. Separately, roughly chop the cherry tomatoes and add roughly chopped cilantro.

Remove the tray from the oven and pile the tortillas beans and cheese into a large bowl. Next add a layer of avocado mix, then a drizzle of greek yogurt and the chopped tomatoes to serve.
