Favorite Recipes and Snacks I've Been Making



Quarantine has been one big test of my healthy cooking abilities. Honestly it is so tempting to grab every greasy, sweet, and salty food on my way down the aisle to lounge on the couch and do some binge watching. But I know that I will only feel like crap if I do that lol, and so I have to come up with healthy, filling, and yummy recipes to get us through this time period when many of my fav food places are either closed or have limited hours. 

Breakfast 




Blueberry Baked Oatmeal 

This is one breakfast recipe that I see myself using all the time in the future. You can bake a full pan on Sunday night and have it in the fridge to heat up during the week. It's perfectly light but also filling! 

Ingredients
- 2 Cups of Oats 
- 3/4 Cup of Almond Milk 
- 1 Cup of Unsweetened Apple Sauce 
- 2 Eggs
- 2 Teaspoons of Pure Vanilla Extract 
- 1.5 Teaspoons of Cinnamon 
- 1/4 Teaspoon of Salt 
- 2 Cups of Blueberries (I used frozen) 
- 1/2 Cup of Plain Greek Yogurt
- 1 Teaspoon of Baking Soda  

Instructions 
- Combine all ingredients into a large bowl and stir. 
- Preheat the oven to 350 degrees. 
- Spread the mixture into a greased casserole dish. 
- Sprinkle blueberries and a bit of cinnamon on top. 
- Bake for 30 - 35 minutes.

Peanut Butter and Banana Toast (A Classic)

This is something I could make when I was like 5 years old, but it is still so good! I love it with my coffee and some fresh berries in the morning, you can make it a little healthier and use wheat bread or enjoy some yummy french bread. 

Ingredients 
- 1 Banana 
- 2 Pieces of Wheat Bread 
- Peanut Butter
- Butter
- Honey 

Instructions 
- Toast the wheat bread and butter it. 
- Spread the peanut butter on the toast. 
- Cut the banana into small slices, and lay them on top of the two pieces of toast evenly.  
- Drizzle honey on top of the banana. 

Enjoy!




Yogurt Bowl 

Another light and healthy breakfast option. No instructions needed on this one, just combine and drizzle the honey on top!  

Ingredients 
- 1 Cup of Plain Yogurt
- 1/2 Cup of Blueberries (or any other fruit that you choose)
- 1/2 Cup of Granola
- Honey

Snack 




Rice Cakes With Toppings

If you head on over to Pinterest, there are SO many different ideas for Rice Cake toppings. Peanut butter, apples, mandarin oranges, cinnamon, honey, avocado, hummus, cucumbers, jelly, blueberries, strawberries, and cream cheese. Rice cakes are a healthier snack than crackers, with less sodium and a good surface area for lots of toppings :) 





Super Easy Bagels

When I first saw this recipe I was like no way this actually works..... and then Brett and I tried it and honestly the bagels actually tasted pretty good! This recipe is so simple and you probably already have the majority of the ingredients. 

Ingredients 
- 2 Cups of All Purpose Flour
- 4 Teaspoons of Baking Powder
- 1/2 Teaspoon of Salt
- 1.5 Cups of Plain Greek Yogurt
- 1 Egg White
- 1 Teaspoon of Water

Instructions 
- Preheat the oven to 375 degrees. 
- Combine the flour, baking powder, and salt in a bowl.
- Add yogurt to the dry ingredients and mix.
- Spread some flour onto a cutting board or hard surface and knead the dough roughly 10 times.
- Cut the dough evenly and shape into circles, lay on greased baking sheet.
- Mix the egg white and water to create an egg wash.
- Spread egg wash over the top of the bagels.
- Sprinkle any kind of topping you wish.
- Bake for 25 minutes.

Dinner 





Chicken and Veggie Fritata

Ingredients 
- 6 Eggs
- 2 Cups of Cooked and Diced Chicken Breast
- 2 Cups of Spinach
- 1 Cup of Diced Red Bell Pepper 
- 1/3 Cup of Milk (I used Almond Milk)
- Salt and Pepper
- 1/2 Cup of Cheddar Cheese (honestly whatever kind of cheese you would like)





Ground Turkey and Vegetable Bowl 

Ingredients 
- 1 Pound of Lean Ground Turkey
- 1 Red Bell Pepper
- 1 Yellow Onion
- Olive Oil
- Other Vegetable of Your Choosing (Recommend: Shaved Brussels Spouts, Broccoli, etc.)
- 1 Tortilla (I used wheat)
- 1 Avocado
- Lime Juice
- Pinch of Cilantro
- Your Choice of Cheese
- Salt and Pepper

Instructions 
- Cook the ground turkey.
- Cut the red bell pepper and half of the yellow onion and cook till brown in a skillet with olive oil and a pinch of salt and pepper. 
- Cut the tortilla into roughly 1.5 inch strips, spread butter in the skillet, and brown the tortilla strips in the butter.
- Scoop ground turkey, onion/pepper mix into a bowl.
- Cut the Avocado and place on top.
- Sprinkle cheese on top of the bowl, followed by lime lime juice and pinch of cilantro.
- Use the tortilla strips like chips!
