Salmon and sausage pasta

Salmon and sausage Pasta is a deliciously-satisfying seafood and meat dish. It combines the rich taste of salmon and the savory smoky goodness of sausages. It’s like surf and turf but as a pasta dish. The tart tomato sauce is perfect for tempering the richness of the salmon and the sausages.

Salmon and sausage pasta

My first initial version of this is salmon pasta in tomato sauce. However, I was looking for a heartier, chunkier, and more savory pasta dish so I thought of adding sausages to it. It turned out well so the succeeding versions of this pasta incorporates salmon and sausages.

Salmon is a rich source of protein, calcium, and Omega-3 fatty acids that help burn fat, control blood pressure and sugar levels, and protects the heart. What’s also good about salmon is that it is high in DHA which helps in the brain development of children.

Another great aspect of this pasta dish is its versatility. You can add vegetables to it to make it more nutrient-dense and high in fiber. I like adding broccoli and cauliflower to it for a heftier texture.

How to make salmon and sausage pasta

To make this salmon and Sausage Pasta recipe will need the following:
    • 500 grams of either fusilli or penne pasta
    • 250 grams salmon steak (shred it into small pieces)
    • Six pieces sausages (any type, you can use different varieties for more flavor)
    • 200 grams bacon (optional)
    • Two sliced red onions, four cloves minced garlic
    • A cup of broccoli and cauliflower
    • Five large sliced tomatoes or 1 can of sliced tomatoes
    • 200 grams of tomato paste
    • An extra cup of tomato sauce (in case you need to make adjustments to the sauce)
    • Three tablespoons of olive oil
    • A knob of butter
    • Grated cheese
    • Salt and pepper to taste

For the salmon, I like to buy it frozen and packed from the grocery store. We bought salmon meat from the fish section of our local public market before but it turned out to be fishy, no matter how I cooked the salmon. I did not like that it left a fishy aftertaste.

Start by cooking the pasta halfway. Set this aside plus two cups of pasta water. Toast the bacon in olive oil and set it aside.

In the same pan where you toasted the bacon, cook the onions halfway then add the minced garlic. When the garlic is just starting to turn a little brown, add the sausages and cook for around thirty seconds to render the flavor.

Add the tomato paste to the pan and a cup of pasta water. Add the tomatoes and simmer for about two minutes. Add the salmon, the knob of butter, half of the toasted bacon, and salt and pepper. At this point, it’s all about just adjusting the taste of the sauce. If you want a zestier sauce, you may add more tomato sauce.

Cook the salmon for a minute, then add the broccoli and cauliflower and coat it with the sauce. Add the pasta and the remaining pasta water, and cook for about a minute or two. Add the remaining toasted bacon. Adjust the seasoning to your liking. Top with grated cheese or serve it separately.

I also like to serve this topped with chopped fresh coriander when it is available in the store. It lends a bright, fresh taste to this rich dish which makes every bite really enjoyable.

You can also make it as healthy as you want by adding vegetables to it or making a side salad to go with it. This salmon and sausage pasta is indulgent and truly satisfying.
