Authentic Thai Prawn Vermicelli in Claypot Recipe

Goong Ob Woonsen is a Thai glass noodles dish that is traditionally cooked and served in a clay pot. It is extremely delicious and flavourful which makes it a favourite among many people who love Thai cuisine.

While chicken Stock is traditionally used in this dish, our recipe calls for Prawn Stock for a deeper seafood flavour – trust us, it really makes a wonderful difference! Our home-made prawn stock takes only 10 minutes to prepare but elevates the taste of this dish multiple times! If you are feeling indulgent, you can even replace the prawns with lobster or crab to make it more luxurious for special occasions.

Ingredients (serves 2)

Prawn stock:

6-8 large tiger prawns
200ml of water
20ml of sake

Sauce:

2 tablespoons of soy sauce
2 tablespoons of oyster sauce
1 teaspoon of dark soy sauce
1 teaspoon of sesame oil
150ml of prawn stock (can be replaced by chicken stock or water)

Aromatics:

½ teaspoon of ground black pepper
½ teaspoon of ground white pepper
5 cloves of garlic, crushed and chopped
10 slices of ginger

Instructions

Making the prawn stock

Step 1

Peel off heads and shells of the prawns. Heat a pot of medium low and add them it. Stir fry for a few minutes.

Step 2

Once the bottom of the pot starts to brown, deglaze with sake. When the alcohol has evaporated, add water and continue to cook until it boils. Simmer for a few minutes and remove the foam on the surface. Turn off the heat.

Step 3

Separate the prawn stock and shells using a mesh strainer. Discard the shells and sit the prawn stock aside to cool.

Making the Goong Ob Woonsen

Step 1

Soak the glass noodles until softened (about 5-10 minutes). In the meantime, put the ingredients for the sauce together and stir till sugar is dissolved.

Step 2

Marinade the glass noodles and prawns with the sauce for about 20 minutes.

Step 3

In a claypot (or normal pot if you do not have one), heat vegetable oil on medium heat and add the aromatics. Stir to prevent the pepper from sticking to the pot and cook till fragrant.

Step 4

Add the noodles and prawns along with the marinade. Cook on a cover with low heat until the sauce boils and noodles are cooked through.

Step 5

Garnish with spring onions or coriander (optional) and serve.
