- Three bunches of asparagus, trimmed
- One tablespoon of extra virgin olive oil
- 2/3 cup of finely diced cucumber
- Two finely diced tomatoes
- One teaspoon lemon juice
- Half tea spoon of dried oregano
- freshly ground black pepper, to taste
- 10 small pitted black olives, quartered
- 60g of Australian reduced-salt feta cheese
Procedure
- Boil or steam the asparagus for like 3-5 minutes or until just tender. Drain and briefly rinse under cold running water then arrange it on a serving platter.
- Combine the olive oil, pepper, cucumber, tomato, lemon juice, oregano, and olives in a small bowl and spoon onto the asparagus, drizzling with any remaining juices. Sprinkle with feta then serve.
- This recipe is a lovely salad to serve at a barbecue and matches well with lean barbecued lamb or beef.
