How to make Asparagus WITH GREEK SALAD DRESSING

Asparagus WITH GREEK SALAD DRESSING

Ingredients
  • Three bunches of asparagus, trimmed
  • One tablespoon of extra virgin olive oil
  • 2/3 cup of finely diced cucumber
  • Two finely diced tomatoes
  • One teaspoon lemon juice
  • Half tea spoon of dried oregano
  • freshly ground black pepper, to taste
  • 10 small pitted black olives, quartered
  • 60g of Australian reduced-salt feta cheese
Procedure
  • Boil or steam the asparagus for like 3-5 minutes or until just tender. Drain and briefly rinse under cold running water then arrange it on a serving platter.
  • Combine the olive oil, pepper, cucumber, tomato, lemon juice, oregano, and olives in a small bowl and spoon onto the asparagus, drizzling with any remaining juices. Sprinkle with feta then serve.
Tips & Hints
  • This recipe is a lovely salad to serve at a barbecue and matches well with lean barbecued lamb or beef.
