Did you know that today is Strawberry Shortcake Day? To commemorate it, Heather Bell and Jenny Engel of Spork Foods have created this new twist on an old favorite:
Pistachio Chewy Bite Strawberry Shortcake
Recipe by Jenny Engel & Heather Bell
Ingredients:
6 Setton Farms Pistachio Chewy Bites
4-5 fresh strawberries, sliced into fourths
1 can non-dairy whipped cream
1/8 teaspoon cocoa powder, for dusting
1/8 teaspoon ground cinnamon, for dusting
Directions:Roughly chop Setton Farms Pistachio Chewy Bites and with damp hands press into four 3-inch circles, using circular molds or a cookie cutter. Set aside on wax paper or a plate.
Place two circles on a plate and squeeze a ring of whipped cream on the edge of the circle. Fill with sliced strawberries and top with additional Pistachio Chewy Bite circle. Top with a dollop of whipped cream and additional slice of strawberry.
Sprinkle tops with cocoa powder and cinnamon. Serve immediately. Serves 2.
