Another Monday has arrived, so it’s time for another Menu Monday and Weekly goals post. I have to confess, I’m excited to see the end of February. March is the month when I feel like I start to come alive again! More so this year, as my kids and I have had a rough cold/flu season. Flowers begin to bloom, the sun begins to shine, and weather begins to warm up. Earth re-awakens in my part of town in March! I couldn’t be more thrilled.
This month we will be stocking up on a lot of items we’ve started running low on, or out of completely. Brown rice, honey, sea salt, and butter are some of the items we’ll be purchasing a lot of to have on hand. As such, our grocery bill will likely be bigger than it’s usual $250/month, but it’s something we plan on each year when we get our tax returns, so we are prepared. We will continue to try and eat out of our pantry as much as possible!
Green eggs and ham – It’ll be fun to celebrate Dr. Seuss’s birthday with food! I don’t own food coloring, so we’ll green it up with spinach in our scrambled eggs, most likely.
Creamy Chicken and Rice Soup – Basically, I’m planning to throw some chicken, carrots, onion, and rice into the slow cooker with some homemade chicken broth, and I’ll season and thicken it to my taste.
Nacho Bar – I’ll supply toppings such as chili, cheese, salsa, sour cream, grilled chicken pieces, etc for the kids to build and broil their own.

That’s all I’ve got planned. We’ll figure out the rest of the week as it happens, I decided!
The goals for this week are super easy, as we’re all still recovering from being sick:
- Finish up the antibiotics.
- Start planning the garden.
- Pay state taxes.
- Vacuum couch
- Attempt to make a menu plan for the entire month of March, based on stuff we already have or can buy on sale easily.
