To me, Pot Pies are just one of those foods that go with the holiday season. We’re always so busy baking and shopping and attending this Christmas party and that Christmas event at school that we really don’t have time to make big meals often. On the nights that we’re really busy, I trust Marie Callender’s Pot Pies. They’re simple to make, my family loves them, and they allow me more time to get other things done.  The holidays are my favorite time of year, but they’re also the most chaotic.

I’ve always loved Pot Pies. There’s just something so warm and comforting about them. Fresh and tasty meat, savory vegetables, and thick, rich, gravy all in a golden, flaky crust. What’s not to love? I especially love Marie Callender’s Family Size Chicken Pot Pies. They’re Pot Pies just like mom used to make.

The awesome thing about Marie Callender’s Pot Pies is that serving them (and eating them!) makes me feel all warm and nostalgic. I can’t help but think about my grandmother spending time chopping each vegetable and making gravy to serve a nice pot pie for her family. It must have taken her all day. I’m so glad to have Marie Callender! Sometimes I’d love to go back in time, and then I think of things like that and I’m very happy for my modern conveniences!

So I went to Walmart and grabbed a couple of Family Size Chicken Pot Pies. One is sufficient – they’re definitely big enough to feed the family, but I like to have an extra one in the freezer. You never know when company will show up or you’ll get home late and need an easy and delicious dinner option. There are so many other options too. I haven’t tried all of them yet, but I particularly like the Cheesy Chicken and Bacon (because, bacon!) and the Creamy Mushroom Chicken Pot Pies. This time, however, I thought simple was better. #PotPiePlease

CRUNCHY BROCCOLI SLAW

While I was shopping, I checked my ibotta app for the cash back deals and grabbed the ingredients to make my famous Crunchy Broccoli Slaw. This is a recipe I make often. My family loves it. It’s a fun way to get kids to eat broccoli without an argument. All you need are some simple ingredients – broccoli, mayonnaise, red wine vinegar, and seasonings to make a delicious and fairly healthy side dish. Here’s the official recipe.

CRUNCHY BROCCOLI SLAW
INGREDIENTS
  • 3 cups broccoli, thinly chopped
  • 1 celery rib, thinly diced
  • 2 cups cauliflower crumbles
  • 1½ cup dried cranberries
  • 1 cup sunflower seeds
  • 2 cups carrots, julienned
  • 1 cup red onions, finely diced
  • 2 cups light mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp red wine vinegar
  • 1 tbsp white sugar (you can add more or less to your liking)
INSTRUCTIONS
  1. In a medium-sized bowl, mix together the mayonnaise, Dijon mustard, sugar, and red wine vinegar, then set aside.
  2. In another bowl, combine the brocolli, celery, cauliflower, cranberries, sunflower seeds, carrots, and red onions. Add in the slaw dressing and mix until the veggie mix is thoroughly coated. Chill for an hour for best flavor, serve with your favorite pot pie.
