Granola bars have been one of our go-to snacks since the boys were very young.
But, unless we get protein bars or some other sort of super filling bars, the regular Chewy Granola Bars you can get in the store are just not cutting it when it comes to snack time, unless my boys eat multiple bars in a sitting.
Last year, I found a great baked Chewy Granola bars recipe, but recently, I found out that I could basically use those same ingredients to make a no-bake version instead. It only takes about 10-15 minutes to put together and then you get chewy granola bars you can cut into the size that’s right for your child. Plus, you can choose your own flavors. For this first week of school, I made one batch of Butterfinger Chewy Granola Bars using the Butterfinger Baking Bits you can find in the baking aisle, and one batch of Caramel Chewy Granola Bites, using the caramel bits also found in the baking aisle. You can use chocolate chips, peanut butter chips, caramel stuffed chocolate chips… whatever flavors you like.
No Bake Chewy Granola Bars
- 1/2 cup butter
- 1/2 cup honey
- 1/2 cup packed brown sugar
- 4 cups quick oats
- 3 cups Rice Krispies
- 1 teaspoon vanilla
- approximately 1 cup of mix-ins (3/4 if you just want a little, can go over a cup if you want a lot)
- Melt butter, honey, and brown sugar in a small pot over medium heat.
- Once it starts to boil, reduce heat and simmer for about 2 minutes, stirring occasionally.
- Mix quick oats and Rice Krispies in a large bowl.
- Pour butter mixture over the cereal, add vanilla, and stir until combined/coated.
- Pour mixture into a greased 9×13″ pan and firmly press into place. (Yes, THAT hard. Yes, keep pressing. Use a spoon or your fingers or your whole palm- but make sure it’s firmly pressed into your pan)
- Refrigerate for about 30 minutes.
- Cut into desired sized bars. I use a pizza cutter and cut these into 12 bars, though you could easily get 24 small bars out of this.
- Store in a sealed container or divide up into snack plastic bags.
