For many years, my husband has enjoyed grilling and making food for folks when they come over. Father’s Day 2004 we gave Jim a small ice Cream maker that worked on the counter top with a freezer bowl that chills in the freezer. We enjoyed it for about a year and then when we PCSed to Germany, it broke and we weren’t able to replace it there.
Because he had loved it so much, we gave him another one since he retired a few years ago. We all have enjoyed his tasty ice cream creations. This month he is letting me share one of our very favorite flavors of ice cream.
Jim’s Toasted Coconut & Almond Ice Cream Recipe
Makes about a dozen social servings or 8 man sized servings
Adapted from a recipe he found in the booklet that came with his ice cream maker.
1 1/2 cups whole milk
1/2 cup sugar
3 cups heavy cream
1 1/2 tablespoons coconut extract
1/2 cup toasted unsweetened coconut
1/2 cup toasted slivered or sliced almonds
Mix on a low speed the sugar and the milk until dissolved.
Stir in cream and coconut extract.
Pour into the ice cream maker freezer bowl and cut it on.
At the 15 minutes, add the toasted almonds and coconut.
Mix for 5-10 more minutes until thickened to a soft creamy consistency.
Put ice cream in a plastic container and put into the freezer for an hour or so.
Take out and let set prior to serving.
Tasty Additions –
Add a few blueberries, pineapple, cherries or chocolate chips to make it a bit tastier.
