Crockpot Pesto Chicken

I was able to pull together a delicious new recipe out of items already in my pantry and freezer and I'm calling it Crockpot Pesto Chicken.

It has been a crazy week, Jordan is still battling the crud, Ron has been busy running sound and lights for a middle school production and I have been hunkered down at home trying to get ahead with my work because Friendraiser season starts in a few weeks. With it being the end of the month I had also run out of meals on my meal plan because we actually ate at home more than usual this month. Thankfully I was able to pull together a delicious new recipe out of items already in my pantry and freezer and I’m calling it Crockpot Pesto Chicken.

Crockpot Pesto Chicken

 I pulled together a delicious new recipe out of items already in my pantry and freezer and I’m calling it Crockpot Pesto Chicken.

The Beginning

  • 1.5 lbs boneless, skinless chicken breasts
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 oz pesto (I use jarred)
  • 1/2 stick butter (sliced)

45 Minutes Before Serving

  • 1 lb tri-color rotini
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded Mozzarella
  1. Place chicken on bottom of crockpot, season with salt and pepper.

  2. Using the back of a spoon, spread all of the pesto over the chicken.

  3. Place the butter slices on top of the pesto covered chicken.

  4. Cover and cook on low for 5 hours.

  5. When the chicken has cooked for 4 1/2 hours, cook the tri-colored rotini according to the instructions on the box, and drain.

  6. Using 2 forks, shred the chicken in the crockpot.

  7. Add the Parmesan cheese and the rotini to the crockpot and mix well.

  8. Sprinkle the Mozzarella cheese over the top of everything in the crockpot.

  9. Cover and cook for 15 more minutes. Serve with a salad and garlic bread.

You can use whatever pasta you have on hand.

Oh my, did my house smell so good all day while this was cooking! I was a bit nervous making this meal on a night when Jordan would be home because he isn’t a fan of pesto. I was very excited when he was the first one to say how much he liked it and he hoped I would send the recipe to his fiance.
