Slow Cooker Chicken Tortillas as seen on FOX4


I recently had the opportunity to share this super easy slow cooker recipe on FOX 4's The Morning Blend here in Southwest Florida. It was live, so I was a bit nervous. We also filmed two other segments that same day, which should appear at a later date.



This easy Crockpot Chicken Tortilla recipe requires only 3 ingredients and no prep work, so is ideal for busy parents (I know, all parents are busy!).  I was skeptical at first, but don’t knock it until you tried it as it tastes quite yummy.

In the morning I’ll throw the ingredients together, go do my work and then have a home cooked meal to serve my family at the end of the day and leftovers for lunch the next day too. It makes me feel like a rock star mom & wife!

Crockpot Chicken Tortillas

Ingredients:

2 to 3 chicken breasts
24 oz jar of salsa (if using 2 breasts, you can save a quarter of the salsa for something else)
1 packet of taco seasoning mix


Directions:

Add chicken breasts to the pot. Cover chicken with seasoning mix (front and back). Pour salsa over the cutlets until it's smothered and all you see is salsa. Cover and cook on low for 8 hours. Once ready, pull apart the meat with two forks into shredded chicken strips and serve burrito style, wrapped in tortillas with a side dish of beans, rice or green beans.

Tip: I cut the cleanup time in half too, by using slow cooker liners, which protects the pot from hard stains and can you simply throw it away after.
