Weight Watchers Lentil Soup

Recipe of the moment: Weight Watchers Lentil Soup

I love soup! Soup can be low calorie and it often works really well with the WW Blue plan. I love that this plan has many zero point foods from which to choose. As a result, it is never difficult to come up with something yummy, a perfect example is my Weight Watchers Lentil Soup.

Unfortunately, I’ve been eating way too many other things too. Soups like this help me to at least get my veggies in.

All the other stuff, I’ll get in order. But, at least I’m getting my veggies in along with my Starbucks too.

• 2 tbsp olive oil

• 1 large onion, diced

• 1 bell pepper, diced

• 3 cloves garlic, minced

• 3 stalks celery, diced

• 2 sweet potatoes, peeled and diced

• 2 tsp basil, dried

• 1/2 tsp oregano, dried

• 3 Kale leaves, stemmed pulled and chopped

• 4 cups water

• 2–15 oz can diced tomatoes, fire roasted are my fav

• 1 can crushed tomatoes

• 1 cup lentils

• 1 bay leaf

• 1 tsp parsley, dried

• 2 tbsp Better Than Bouillon Roasted Chicken Base

• 1 tsp freshly squeezed lemon juice, more to taste

• 1/4 tsp ketchup

• Pinch of sugar, to balance flavors. Only if desired.

• salt and pepper to taste

This is a luscious, hearty meal. You’ll love it!

INSTRUCTIONS

1. Heat oil in a large pot over medium-low heat.

2. Once hot, add onion, peppers. and cook until veggies soften. Then, add celery and cook for 5 more minutes, stirring often. Add garlic last to avoid over cooking. Add seasonings/spices and cook for one more minute or so. Should be smelling pretty good in your kitchen about now. You’re welcome.

3. Add water, all tomatoes, bay leaf. Add ketchup and Better Than Bouillon Roasted Chicken Base. Stir until dissolved.

4. Rinse lentils in a strainer and add to the party/pot. Stir and taste. Check for seasonings.

5. Bring to a boil, reduce the heat to low and simmer, covered until the vegetables are tender, about 30 minutes. Simmer longer if you can. Add the kale and cook 5 minutes more.

6. Remove from heat and add the lemon juice. Serves 8. 1 WW Point per bowl on the WW Blue Plan.

Note for my special Weight Watchers Lentil Soup

Sometimes, to speed things up, I par-boil (partially boil) potatoes in separate pot. Usually, I just cut them small enough to cook alongside lentils.

Also, I like to cook my kale until it’s very soft. So, I often add earlier to break it down a bit more.

If you want a thicker soup your can mash a few of your potatoes or add a bit of tomatoes paste.
